Abstract
Description
(a)水および本発明によるタンパク質組成物を含み、場合により炭水化物、脂肪、ビタミンおよび/またはミネラルをさらに含む組成物を提供する工程;ならびに
(b)得られた組成物を熱処理に供する工程、
を含む方法に関する。
本発明は、組成物100ml当たり8〜20gのタンパク質を含み、該タンパク質の少なくとも40重量%がミセルカゼインであり、該タンパク質の少なくとも10重量%が加水分解乳清タンパク質である、液体栄養組成物に関する。
本発明による栄養組成物は、組成物100ml当たり8〜20gのタンパク質を含む。
本発明による栄養組成物が炭水化物を含む場合、炭水化物は組成物の総エネルギー含量の20〜60%を提供することが好ましい。
本発明による栄養組成物が脂肪を含む場合、脂肪は組成物の総エネルギー含量の20〜50%を提供することが好ましい。
好ましい実施形態において、本発明による栄養組成物は、キレート剤を含む。キレート剤は、好ましくは、リン酸、クエン酸、可溶性リン酸塩、可溶性クエン酸塩、およびこれらの混合物からなる群から選択される。可溶性クエン酸塩の例としては、クエン酸ナトリウムおよびクエン酸カリウムが挙げられる。可溶性リン酸塩の例としては、リン酸ナトリウム、リン酸カリウム、リン酸水素二ナトリウムおよびリン酸水素二カリウムが挙げられる。好ましくは、キレート剤は、クエン酸もしくは可溶性クエン酸塩、またはこれらの組み合わせである。
本発明による栄養組成物は、場合により、非消化性炭水化物、ビタミンおよび関連する栄養素、およびミネラルからなる群から選択される1または複数の追加の成分を含む。
本発明による液体栄養組成物は、熱処理後でも驚くほど低い粘度を有することが見出された。
本発明はまた、全組成物の乾燥物に基づいて少なくとも60重量%のタンパク質を含み、タンパク質の乾燥物に基づいて該タンパク質の少なくとも40重量%がミセルカゼインであり、該タンパク質の少なくとも10重量%が加水分解乳清タンパク質である組成物に関する。この組成物は、本明細書においてタンパク質組成物とも呼ばれる。
本発明はまた、本発明による栄養組成物の製造方法に関する。栄養組成物およびその好ましい実施形態は、上で詳細に記載されている。

本発明はさらに、本発明によるタンパク質組成物の製造方法に関する。タンパク質組成物およびその好ましい実施形態は、上で詳細に記載されている。
(i)ミセルカゼインおよび水を含む組成物を提供する工程、
(ii)加水分解乳清タンパク質および水を含む組成物を提供する工程、ならびに
(iii)工程(i)の混合物と工程(ii)の混合物とを湿式混合する工程、
を含む。
(i)ミセルカゼインおよび水を含む組成物を提供する工程、
(ii)加水分解乳清タンパク質および水を含む組成物を提供する工程、
(iii)工程(i)の混合物と工程(ii)の混合物とを湿式混合する工程、ならびに
(iv)微粒子製品の形態でタンパク質組成物を得るために、工程(iii)の混合物を乾燥する工程、
を含む。
(i)ミセルカゼインを含む組成物を微粒子製品の形態で提供する工程;
(ii)加水分解乳清タンパク質を含む組成物を微粒子製品の形態で提供する工程;そして
(iii)工程(i)の混合物と工程(ii)の混合物とを乾式ブレンドする工程、
を含む。
表1に示す成分を含むいくつかの液体栄養組成物を調製した。
熱処理後の液体栄養組成物の粘度を、カップおよびボブの幾何形状を使用する回転粘度計を用いて決定した。粘度は、CC−27のAnton Paar MCR302レオメーターを用いて、5℃および20℃において1日保存後、10s−1、100s−1および1000s−1の剪断速度で測定した。
本発明による組成物の味を試験パネルにより試験し、カゼイン塩を含む比較組成物の味と比較した。組成物は、盲験として周囲温度で供された。パネルは組成物の甘さ、濃厚さ、苦味および一般的な許容性を評価した。試験パネルは、(変性)カゼイン塩を含む比較組成物が、加水分解乳清タンパク質を含む本発明の組成物と比較して、口当たりにおいてより高い粘着性を示したという意見であった。これらの結果は粘度測定値と一致する。驚くべきことに、本発明による組成物には明白な苦味は認められず、他の典型的な加水分解物の異臭も認められなかった。結論として、加水分解乳清タンパク質を含む本発明による組成物は、良好な感覚特性を有する。
本発明による液体栄養組成物を、タンパク質の脱塩水溶液を調製し、タンパク質溶液に炭水化物源を添加し、ミネラル溶液を添加し(任意選択)、その後、混合物を40〜80℃の範囲、好ましくは50〜70℃の範囲、最も好ましくは約60℃の温度に温めることによって調製する。場合により、1または複数の脂肪源を添加し、混合物を場合により均質化する。液体脂肪流を、場合により約50〜70℃、例えば60℃)の温度に予備加熱する。脂肪の添加後、混合物を好ましくは周囲温度(約20℃)に冷却し、必要に応じてpHを調整する。次いで、混合物を均質化工程、好ましくは2段階均質化工程に供する。次いで、得られた栄養組成物を、例えば121℃で10分殺菌する。
液体栄養組成物13(比較例)および14〜15を表8に示される成分から調製し、これらは表9に示される栄養組成を有した。
液体栄養組成物16および17を、表10に示される成分から調製し、これらは表11に示される栄養組成を有した。組成物16および17の両方は、総タンパク質に基づいて70重量%のミセルカゼインを含んだ。
Claims (18)
- 組成物100ml当たり8〜20gのタンパク質を含み、前記タンパク質の少なくとも40重量%がミセルカゼインであり、前記タンパク質の少なくとも10重量%が加水分解乳清タンパク質である、熱処理された液体栄養組成物。
- 前記組成物100ml当たり9〜18gのタンパク質を含む、請求項1に記載の組成物。
- 前記タンパク質の少なくとも50重量%がミセルカゼインであり、および/または前記タンパク質の少なくとも15重量%が加水分解乳清タンパク質である、請求項1または2に記載の組成物。
- 前記タンパク質が、無傷の乳清タンパク質、無傷のまたは加水分解されたカゼイン塩、無傷のまたは加水分解された植物タンパク質、無傷のまたは加水分解された藻類タンパク質および加水分解コラーゲンからなる群から選択される1または複数種のタンパク質をさらに含む、請求項1〜3のいずれか1項に記載の組成物。
- 前記加水分解乳清タンパク質が1%以上の加水分解度を有する、請求項1〜4のいずれか1項に記載の組成物。
- 20℃および剪断速度100s−1において、前記組成物の粘度が150mPa・s以下である、請求項1〜5のいずれか1項に記載の組成物。
- 前記組成物が、1.5kcal/ml以上のエネルギー密度を有する、請求項1〜6のいずれか1項に記載の組成物。
- 前記組成物が、脂肪および/または炭水化物をさらに含む、請求項1〜7のいずれか1項に記載の組成物。
- 前記組成物が、0.5〜10g/lの量のキレート剤をさらに含む、請求項1〜8のいずれか1項に記載の組成物。
- 前記組成物のpHが6〜8の範囲である、請求項1〜9のいずれか1項に記載の組成物。
- 全組成物の乾燥物に基づいて少なくとも60重量%のタンパク質を含み、タンパク質の乾燥物に基づいて前記タンパク質の少なくとも40重量%がミセルカゼインであり、前記タンパク質の少なくとも10重量%が加水分解乳清タンパク質であるタンパク質組成物。
- タンパク質の乾燥物に基づいて、前記タンパク質の少なくとも50重量%がミセルカゼインであり、および/または前記タンパク質の少なくとも15重量%が加水分解乳清タンパク質である、請求項11に記載のタンパク質組成物。
- 前記組成物が、組成物の乾燥物に基づいて少なくとも80重量%、好ましくは少なくとも85重量%のタンパク質を含む、請求項11または12に記載のタンパク質組成物。
- 前記組成物が、無傷の乳清タンパク質、無傷のまたは加水分解されたカゼイン塩、無傷のまたは加水分解された植物タンパク質、無傷のまたは加水分解された藻類タンパク質および加水分解コラーゲンからなる群から選択される1種または複数種のタンパク質をさらに含む、請求項11〜13のいずれか1項に記載のタンパク質組成物。
- 前記加水分解乳清タンパク質が1%以上の加水分解度を有する、請求項11〜14のいずれか1項に記載のタンパク質組成物。
- 請求項1〜10のいずれか1項に記載の栄養組成物の製造方法であって、
(a)水および請求項11〜15のいずれか1項に記載のタンパク質組成物を含み、場合により炭水化物、脂肪、ビタミンおよび/またはミネラルをさらに含む組成物を提供する工程;ならびに
(b)得られた組成物を熱処理に供する工程、
