Abstract
【解決手段】本発明は、トリゴネリン及びクロロゲン酸類を含有する機能性食品の製造方法である。本発明の機能性食品の製造方法は、コーヒー生豆を熱処理・解砕せずに非沸騰状態の溶媒に晒すことにより、トリゴネリン及びクロロゲン酸類を含有する抽出液を得る抽出工程を有する。前記溶媒の温度は、好ましくは85〜95℃である。前記抽出工程において前記コーヒー生豆を前記溶媒に晒す時間は、好ましくは45〜90分である。

また、本発明の機能性食品におけるクロロゲン酸類の含有量は、該機能性食品の全質量に対して乾燥物換算で、38質量%以上であり、好ましくは40質量%以上、さらに好ましくは43質量%以上である。クロロゲン酸類の含有量は多いほど好ましく、上限は特にないが、通常55質量%程度である。
機能性食品中のトリゴネリン及びクロロゲン酸類の含有量は、それぞれ、公知の定量分析方法を用いて常法に従って測定できる。両成分の定量分析方法として、高速液体クロマトグラフィー(HPLC)を例示できる。HPLCによる各成分の分析条件は例えば下記のように設定できる。
・カラム:TSKgel Amide−80(4.6mm(I.D.)×250mm、TOSOH製)
・カラム温度:80℃
・移動相:アセトニトリル80質量%と精製水20質量%との混合液
・流速:1.2mL/min
・検出波長:265nm
・カラム:TSKgel ODS−120A(4.6mm(I.D.)×150mm、TOSOH製)
・カラム温度:40℃
・移動相:トリフルオロ酢酸0.05質量%とアセトニトリル99.95質量%との混合液を用い、且つトリフルオロ酢酸濃度が0.05質量%含むアセトニトリル50質量%にまで変化するリニアグラジエントとする。
・流速:1.2mL/min
・検出波長:280nm
水300Lを90℃に昇温して非沸騰状態の水を得、これを抽出溶媒として、そこにコーヒー生豆(ブラジル産、サントス豆)を熱処理・解砕せずに30kg投入し浸漬した。抽出溶媒をゆるやかに攪拌しつつ、コーヒー生豆の斯かる浸漬状態を60分間維持(即ち抽出時間60分間)し、抽出液を得た。その後、抽出液をその液温が約50℃になるまで冷却し、さらに抽出液の濾過を行って豆などの固形物を除去した後、該抽出液をBrixが15%となるまで減圧加熱濃縮し、濃縮液を得た。この濃縮液に、該濃縮液と質量にして等量のデキストリン(松谷化学(株)製、マックス1000)を投入し溶解させ、さらに90℃で15分間加熱殺菌を行った後、噴霧乾燥装置(大川原化工機(株)製、ODA−70型)を用い出口温度90℃で管理して、該濃縮液の噴霧乾燥を行い、粉末状機能性食品を得た。
抽出源として用いるコーヒー生豆の種類及びその解砕の有無、抽出溶媒の温度、抽出時間を適宜変更した以外は実施例1と同様にして、粉末状機能性食品を得た。
Claims (6)
- トリゴネリン及びクロロゲン酸類を含有する機能性食品の製造方法であって、
コーヒー生豆を熱処理・解砕せずに非沸騰状態の溶媒に晒すことにより、トリゴネリン及びクロロゲン酸類を含有する抽出液を得る抽出工程を有する、機能性食品の製造方法。 - 前記溶媒の温度が85〜95℃である請求項1に記載の機能性食品の製造方法。
- 前記抽出工程において前記コーヒー生豆を前記溶媒に晒す時間が、45〜90分である請求項1又は2に記載の機能性食品の製造方法。
- 前記抽出工程後に、前記抽出液をBrixが12〜18%となるまで濃縮し、その濃縮液に粉末化剤を添加後、該濃縮液を噴霧乾燥する工程を有する請求項1〜3のいずれか1項に記載の機能性食品の製造方法。
- 前記機能性食品が、前記トリゴネリンを2.5質量%以上、前記クロロゲン酸類を38質量%以上含有する請求項1〜4のいずれか1項に記載の機能性食品の製造方法。
- トリゴネリンを2.5質量%以上、クロロゲン酸類を38質量%以上、並びにデキストリン及び加工澱粉からなる群から選択される1種以上を含有する粉末状機能性食品。
