表1に示す製剤について、安定性試験を実施した。各製剤を30ml容ネジ蓋付き試験管に入れ、調製直後の透明性を目視にて確認した後、分光光度計により波長650nmにおける透過率(T650)を測定した。また、各製剤を0℃または−5℃で7日間保管し、室温で2時間静置した後の各製剤の透明性を目視にて確認し、透過率(T650)を分光光度計により測定した。結果を表2に示す。
表1に示す製剤A〜H、L〜QおよびSを用いて殺菌力試験を実施した。各製剤を脱イオン水で10〜40重量%(Penicillium citrinum NFRI 1019を供試菌とする場合は、70〜100重量%)に希釈したものを、10mlずつ試験管に分注した。これに馬血清(GIBCO社製)を終濃度5%になるように添加し、さらに生理食塩水で希釈した下記供試菌の菌液を1.0×105〜1.6×106CFU/mlの濃度になるように接種し、供試液とした。菌接種後1分経過後の供試液10μlを取り、MRS(デ・マン,ロゴサ,シャープ)ブイヨン培地にて、30℃で48時間(Penicillium citrinum NFRI 1019を供試菌とする場合は、5日間)培養した。菌未接種のMRS培地をコントロールとし、目視で培地の濁りを比較して、各製剤の殺菌効果を判定した。結果を表3〜6に示す。

表1に示す製剤A、B、G、M、O、RおよびSを用いて官能試験を実施した。市販のウインナーをトレイに広げ、5分間通風放置し、約15℃に冷却した各製剤1Lに対し、ウインナー22本(約450g)を1分間浸漬した。次いで、ざるの上でウインナーを1分間液切りし、4℃で4日間保存した。保存後のウインナーを、未処理品を対象として、異臭、アルコール臭、苦味および酸味について下記基準を基に5名のパネラーで評価を行った。結果を表7〜10に示す。

異臭/アルコール臭/苦味/酸味 が強い :−2
製剤A、B、D、G、P、QおよびSを用いて、鉄およびアルミに対する腐食性試験を実施した。各製剤原液60mLに縦50mm×横30mm×厚さ1mmの鉄片またはアルミ片を浸漬し、25℃で4週間保存し、腐食の有無を目視にて確認した。評価は、水道水に浸漬した場合をコントロールとし、下記基準に基づいて行った。結果を表11に示す。

Claims (7)
- エタノール100重量部に対し、重合度3以上の鎖状ポリリン酸塩0.05〜0.5重量部、クマザサエキス0.005〜0.15重量部およびpH調整剤を有効成分として含有する、食品または食品製造・加工機器の殺菌に用いられる殺菌剤組成物。
- 重合度3以上の鎖状ポリリン酸塩が、トリポリリン酸ナトリウムである、請求項1に記載の殺菌剤組成物。
- pH調整剤が、乳酸、フマル酸、グルコン酸、クエン酸、フィチン酸およびこれらのナトリウム塩、カリウム塩、カルシウム塩、アンモニウム塩、マグネシウム塩から選ばれる1種以上である請求項1または2に記載の殺菌剤組成物。
- さらにグリセリン脂肪酸エステルを含有する、請求項1〜3いずれかに記載の殺菌剤組成物。
- グリセリン脂肪酸エステルが、カプリル酸モノグリセライドおよびカプリン酸モノグリセライドである、請求項4に記載の殺菌剤組成物。
- エタノール100重量部に対し、グリセリン脂肪酸エステル0.1〜2重量部を含有する、請求項4または5に記載の殺菌剤組成物。
- 原液のpHが3.5〜4.7である請求項1〜6いずれかに記載の殺菌剤組成物。
