Abstract
【解決手段】この醤油含有調味液は、醤油と、粉末醤油と、糖類と、食塩とを含有し、前記粉末醤油の含有量が0.2〜16質量%であり、耐熱性容器に封入され、加熱殺菌されている。前記醤油及び前記粉末醤油由来の合計窒素含有量を100質量%としたとき、前記粉末醤油由来の窒素含有量が1〜85質量%であることが好ましい。また、前記加熱殺菌が、80〜130℃で、1〜60分間行われたものであることが好ましい。更に、具材と、畜肉エキス及び/又は魚介エキスとを更に含有することが好ましい。この醤油含有調味液は、米飯又は惣菜の味付けに好適に用いられる。

Description
(醤油含有調味液の製造)
下記表1に示す配合で、醤油含有調味液を製造した。
うるち精白米1合を研いで水を切り、所定量加水し電気炊飯器で炊飯して炊飯米を得た。比較例及び実施例の醤油含有調味液30gを、炊飯米340gに加え、しゃもじでよく混ぜ込んで、混ぜご飯を調製した。
醤油含有調味液の官能評価は、レトルトパウチを開封後、調味液1mlをスプーンで口中にとり、口に入れた直後の醤油の香り立ちを、比較例1の評価を3として、下記表2の通り5段階で評価した。
粉末醤油を、ドラムドライで乾燥し、粉末化したもの(キッコーマン食品社製)に変えた他は、試験例1と同様にして、醤油含有調味液を製造した。
Claims (5)
- 醤油と、粉末醤油と、糖類と、食塩とを含有し、前記粉末醤油の含有量が0.2〜16質量%であり、耐熱性容器に封入され、加熱殺菌されていることを特徴とする醤油含有調味液。
- 前記醤油及び前記粉末醤油由来の合計窒素含有量を100質量%としたとき、前記粉末醤油由来の窒素含有量が1〜85質量%である請求項1記載の醤油含有調味液。
- 前記加熱殺菌が、80〜130℃で、1〜60分間行われたものである請求項1又は2記載の醤油含有調味液。
- 具材と、畜肉エキス及び/又は魚介エキスとを更に含有する請求項1〜3のいずれか1つに記載の醤油含有調味液。
- 米飯又は惣菜の味付けに用いられる請求項1〜4のいずれか1つに記載の醤油含有調味液。
