Description
a)カプセル内に水を導入してカプセル封入物内の茶葉を浸水させる工程と、次いで、
b)最大80ml/分の浸漬流量(soaking flow)で水を導入する工程と、次いで、
c)所要量の飲料が吐出されるまでカプセル内に水を導入する工程と
を含み、工程b)の少なくとも1つの期間中、カプセル内に浸漬流量を上回る撹拌流量で水を導入して茶葉を撹拌する。
淹出される茶葉の性質、特にサイズ、乾燥度、風味、および
最終飲料の所望の濃度
に応じて調整することができる。
茶葉を含む封入物と、
封入物の少なくとも1つのろ過側面を囲むろ過壁と、
ろ過壁の後方の淹出液の経路内に配置される越流壁であり、少なくとも1つの越流開口部を有するか、あるいは少なくとも1つの越流開口部を作製可能または指示(indicate)可能なそれぞれ少なくとも1つの穿孔手段または穿孔指示手段に関連する越流壁と
を備えるカプセルを用いて実施される。好ましくは、ろ過壁は、封入物を通過する中央水平面の上方に、少なくとも1つの越流開口部あるいは穿孔手段または穿孔指示手段を配置するようにカプセルが配されたときに、上記平面の下方から延びる。この種のカプセルは、国際公開第2007/042414号で詳細に記述されている。
飲料原料を収容しかつ識別部材を有するカプセルと、
上記カプセルを受け入れるための飲料製造装置であり、カプセルの識別部材を読んでカプセルの情報を読み取るための読取り手段、およびこの読取り手段に接続されておりかつ読み取られた情報に応じて飲料製造装置の動作を制御するように設計されている制御手段を備える飲料製造装置と
を備え、識別部材が、上述したプロセスに従って茶葉を淹出するための命令を上記装置に与えることを特徴とする。
カプセルは最初に、再び温水で、ただし茶葉を撹拌せず茶葉が開くように50ml/分の最低流量で満たされ、
次いで、カプセルは、茶葉を再分散させるために、より大きな流量150ml/分(工程b’)の温水で3秒間という短時間だけ満たされて葉が撹拌され、
次いで、カプセルは最終的に、再び温水で、ただし茶葉を撹拌せず再分散した茶葉が開くように50ml/分の最低流量で満たされる。
茶葉が静止したままでいて開くことができるように、カプセル内に温水は導入されない。しかし、ポンプは、ポンプ内での水の滞留と湯垢の発生とを回避するために、この短い期間中に停止されない。温水流はカプセルの入口から導かれ空費するように送られるだけである。
次いで、カプセルは、茶葉を撹拌し再分散させるために、3秒間に亘って150ml/分の流量(工程b’)の温水で満たされ、
次いで、温水の流れは、流れがカプセルに入らないようにしかつ再分散された葉が静止したままでいて開くことができるように、空費するように導かれる。
Claims (14)
- 茶葉を含む封入物を有するカプセルを用いて飲料装置内で飲料を調製するためのプロセスであって、
a)前記カプセル内に水を導入して前記カプセル封入物内の前記茶葉を浸水させる工程と、次いで、
b)最大80ml/分の浸漬流量で水を導入する工程と、次いで、
c)所要量の飲料が吐出されるまで前記カプセル内に水を導入する工程と
を含み、工程b)の少なくとも1つの期間中、前記カプセル内に前記浸漬流量を上回る撹拌流量で水を導入して茶葉を撹拌する、プロセス。 - 工程a)の間、水が少なくとも150ml/分の流量で導入される、請求項1に記載のプロセス。
- 工程b)の間、前記浸漬流量がゼロである、請求項1または2に記載のプロセス。
- 前記カプセル内に前記浸漬流量を上回る撹拌流量で水を導入して茶葉を撹拌する前記少なくとも1つの期間の時間長が5秒未満である、請求項1〜3のいずれか一項に記載のプロセス。
- 工程b)の時間長が、少なくとも5秒であり、好ましくは最大50秒である、請求項1〜4のいずれか一項に記載のプロセス。
- 工程b)の間、前記撹拌流量が少なくとも150ml/分を上回る、請求項1〜5のいずれか一項に記載のプロセス。
- 工程c)の間、水が少なくとも150ml/分の流量で導入される、請求項1〜6のいずれか一項に記載のプロセス。
- 水が30℃と95℃の間に含まれる温度で導入される、請求項1〜7のいずれか一項に記載のプロセス。
- 茶葉を含む封入物(20)と、
前記封入物の少なくとも1つのろ過側面を囲むろ過壁(22)と、
前記ろ過壁の後方の浸出液の経路内に配置されかつ少なくとも1つの越流開口部(25)を有する越流壁(3)と
を備えるカプセル(2)を用いて実施されることを特徴とする、請求項1〜8のいずれか一項に記載のプロセス。 - 前記封入物(20)を通過する中央水平面(P)の上方に前記越流開口部(25)を配置するように前記カプセルが配されたときに、前記ろ過壁が前記面(P)の下方から延びることを特徴とする、請求項9に記載のプロセス。
- 飲料原料を収容しかつ識別部材(6)を有するカプセル(2)と、
前記カプセルを受け入れるための飲料製造装置であり、前記カプセルの識別部材(6)を読んで前記カプセルの情報を読み取るための読取り手段(50)、および前記読取り手段に接続されておりかつ読み取られた前記情報に応じて前記飲料製造装置(11)の動作を制御するように設計されている制御手段を備える飲料製造装置と
を備える飲料製造システムにおいて、
前記識別部材が、請求項1〜10のいずれか一項に記載のプロセスに従って茶葉を淹出するための命令を前記装置に与えることを特徴とする、飲料製造システム。 - 前記装置可読情報が、前記水の温度と、工程a)、b)および/またはc)の前記水の流量と、工程b)の撹拌期間の数と、前記工程a)、b)および/またはc)の時間長と、それらの組合せとでなるリストから選択される、請求項11に記載の飲料製造システム。
- 前記カプセル(2)が、
茶葉を含む封入物(20)と、
前記封入物の少なくとも1つのろ過側面を囲むろ過壁(22)と、
前記ろ過壁の後方の淹出液の経路内に配置されかつ少なくとも1つの越流開口部(25)を有する越流壁(3)と
