(4)1種または2種以上のタンパク質分解酵素が、プロテイナーゼおよびペプチダーゼ酵素を共に含む、項目(1)〜(3)のいずれか1つの下に記載した方法。
(5)1種または2種以上のタンパク質分解酵素が、Aspergillus oryzaeからの酵素調製物(Umamizyme(登録商標))を含み、加水分解を、40℃〜60℃にて行う、項目(1)〜(4)のいずれか1つの下に記載した方法。
アスペルギルス属からのプロテアーゼ、Aspergillus saitoiからのプロテアーゼ、Aspergillus sojaeからのプロテアーゼ、プロテアーゼ(B. licheniformis)(アルカリ性)、プロテアーゼ(B. licheniformis)(アルカラーゼ(Alcalase))、Bacillus polymyxaからのプロテアーゼ、バチルス属種からのプロテアーゼ、バチルス属種からのプロテアーゼ(エスペラーゼ(Esperase))、リゾプス属種からのプロテアーゼ、プロテアーゼS、プロテアソーム、Aspergillus oryzaeからのプロテイナーゼ、プロテイナーゼ3、プロテイナーゼA、プロテイナーゼK、プロテインC、ピログルタミン酸アミノペプチダーゼ、レニン、レンニン、ストレプトキナーゼ、サブチリシン、サーモリシン、トロンビン、組織プラスミノーゲンアクチベーター、トリプシン、トリプターゼ、ウロキナーゼ。
Ceramix(登録商標)、Alcalase(登録商標)、Viscozyme(登録商標)およびUmamizyme(登録商標)を含む多数の酵素調製物は、40℃〜55℃、例えば約45℃〜約55℃の温度にて、pH調整を伴わずに、またはいかなる補助因子をも加えずに、水中のセロリの液化されたスラリー中で良好に作用する。他のものは、必要であり得るか、あるいはpHもしくは温度調整、または添加物から利益を享受する。Umamizyme(登録商標)は、約40℃〜約60℃の温度に耐え、約55℃にて最適である。Umamizyme(登録商標)は、Aspergillus oryzaeから由来しており、エンドペプチターゼおよびエキソペプチダーゼ活性が豊富である。
Claims (1)
- 1種または2種以上のタンパク質分解酵素が、Aspergillus oryzaeからの酵素調製物(Umamizyme(登録商標))を含み、加水分解を、40℃〜60℃にて行う、請求項1〜4のいずれか一項に記載の方法。
