Abstract
Description
表1のように設定された溶液を「REXAM EZI FOAMER」(登録商標)に係る発泡スプレーヘッドを具えるスクイーズボトルに詰めた。5gの溶液を1杯の新たに用意したインスタントコーヒーの表面にスプレーした。コーヒーの表面に、50mlの、快い味わいの、クリーム状で、カプチーノ様の泡頂部が形成された。20分経過後においてもコーヒーの表面は25mlの泡によって完全に覆われていた。
100gのウォッカ(アルコール37.5体積%);2gのパルミチン酸/ステアリン酸スクロース(HLB16.0、75%のモノエステル);1gの天然赤色食品着色剤(プロピレングリコール+カルミン);及び、2gのチェリー香味料を室温で15分間激しく撹拌し、6000Gで15分間遠心分離して、発泡機のノズルを詰まらせるであろう残留固形物を回転分離した。
100gスコッチウイスキー(アルコール40体積%)及び0.8gオレイン酸スクロースを共に3分間撹拌した。そのオレイン酸エステルはウイスキー中に完全に溶解し、透明で安定した溶液が形成された。「REXAM」M3ミニ発泡機を通して送出するとき、一回分と同等な量から、半パイント量の濃いウイスキー味の泡が得られた。
Claims (14)
- 食品若しくは飲料として、食品用若しくは飲料用のトッピングとして、又は、食品若しくは飲料の成分として用いられる泡において、少なくとも1つの界面活性剤の水性又は水性エタノール性溶液を含み、該界面活性剤は食品用途に適合し、該界面活性剤はHLBが9を超える泡。
- 飲料又は食品の表面に泡トッピングを形成する方法において、該飲料又は該食品の表面に請求項1に記載の泡をスプレーするステップを具える方法。
- 請求項1に記載の泡を作る手段において、前記泡はHLBが9を超える食品等級界面活性剤の水性又は水性エタノール性溶液を含み、該方法は前記溶液を泡として送出するように構成された手段を具える手段。
- 発泡飲料若しくは発泡食品又は頂部が泡で覆われた飲料若しくは食料を作るための、HLBが9を超える水性又は水性エタノール性食品等級界面活性剤の使用。
- 請求項4に記載の使用のための水性又は水性アルコール性溶液であって、HLBが9〜12の少なくとも1つの界面活性剤と、HLBが12を超える少なくとも1つの界面活性剤とを含む水性又は水性アルコール性溶液。
- 請求項5に記載の水性又は水性アルコール性溶液において、前記界面活性剤は本質的に非イオン性界面活性剤及び/又はサポニンからなる水性又は水性アルコール性溶液。
- 請求項6に記載の水性又は水性アルコール性溶液において、前記界面活性剤は実質的にエトキシ化されていない水性又は水性アルコール性溶液。
- 請求項7に記載の水性又は水性アルコール性溶液において、前記界面活性剤は本質的に糖エステル、変性されたセルロース及び/又はサポニンからなる水性又は水性アルコール性溶液。
- 請求項4に記載の使用のための食品用途に適合した平均HLBが9を超える非イオン性界面活性剤の水性又は水性アルコール性溶液において、メチルセルロースと糖エステルとの混合物を含む水性又は水性アルコール性溶液。
- 請求項4に記載の使用のための食品用途に適合した平均HLBが9を超える界面活性剤の水性又は水性アルコール性溶液であって、メチルセルロースとサポニンとの混合物を含む水性又は水性アルコール性溶液。
- 請求項1に記載の泡の調製に用いられる水性アルコール性溶液であって、該溶液は10〜40重量%のエタノールと、HLBが9を超え、発泡剤として有効であるために充分な量の糖エステルとを含む溶液。
- 請求項11に記載の水性アルコール性溶液であって、さらに7〜40重量%の糖を含む水性アルコール性溶液。
- 請求項5〜11のいずれかに記載の水性又は水性アルコール性溶液であって、さらにグリセロールを含む水性又は水性アルコール性溶液。
- 請求項11に記載の溶液の製造に用いられる濃縮物であって、ニュートラルスピリット及び必要濃度の糖エステルを含む濃縮物。
