Abstract
Description
a) かんきつ類の果実繊維と天然でんぷんとをブレンドし、
b) 工程a)のブレンドを機械的に処理して均質な混合物を得、
c) 混合物を緩やかに撹拌しながらでんぷんの糊化温度まで煮る。
・ かんきつ類の果実繊維および天然でんぷんを含む組成物は、高い栄養価を有し、加工する間安定しておりそして、ポジティブな食品表示を可能にする。
WO2006/033697に開示されているプロセスによって得られたオレンジパルプ繊維 (OPF) の水結合 (プロトコル Iに従って測定した) および油結合能 (プロトコル IIに従って測定した)を測定した。結果は下記の通りであった:
一方の側のオレンジパルプ繊維およびワキシーコーンスターチならびに他方の側のオレンジパルプ繊維(OPF)およびコーンスターチの組成物を形成しそして該組成物は剪断処理を受けた。適用した剪断処理は、Silversonミキサーを用いて1.5 分間13500 rpmであった。
下記のレシピを用いて3つのソースを調製した:
・本発明に従う組成物: もち米粉およびオレンジパルプ繊維 (比 3:1)
・熱抑制されたでんぷん: NOVATION 2300
・化工でんぷん: C*Tex 06209
種々のソースのレオロジーを60°Cで測定した (回転 = 図1)。
例 4: 低温貯蔵 (5°C)した後のソースの記述的なテクスチャおよび官能分析:

C*Tex 06209, Novation 2300、およびもち米粉/オレンジパルプ繊維についての離水(syneresis)を測定することは可能でなかった、と言うのは、すべてが検出限界より低かったからである。
水結合能
3つの試料を種々の粒度分布 (40 μm、75μm、および、250μm)で粉砕しそして次いで、精密天秤 Sartorius CP 3245を用いて秤量した。各々の試料を二重に調製しそして平均値を計算して最終の結果をもたらした。
- 繊維 (乾燥粉末) 0.5 gを秤量し (W1)て50ml 遠心分離管に入れ、
- ミリ-Q 水を40 g加えた。水の重量を書き留めた(W2)、
- 管を閉じそして手動で1分間撹拌し、
- 次いで、遠心分離機 Labofuge 400 Heraeusを用いて管に2000 rpmの遠心分離を5分間受けさせ、
- 上澄みをデカントしそして秤量した (W3)。

油結合能
生成物の油結合(OLB) は、5% 粉末分散液を遠心分離しそして沈殿を秤量することによって求めた。
OLB = Wco / Wcp
出発油混合物中の生成物% Wp = W1 x 100 / (W1 + W2)
出発油混合物中の油% Wo = W2 x 100 / (W1 + W2)
生成物重量 Wcp = (Wp/100) x (W4 - W3)
油結合 Wco = W5 - W3 - Wcp
Claims (15)
- 水結合能7〜25 (w/w) を有するかんきつ類繊維ならびにコーンスターチ、米粉、モロコシでんぷん、タピオカでんぷん、ワキシー小麦粉、アミラーゼ活性の無いジャガイモでんぷんおよびこれらの混合物からなる群より選ばれる天然でんぷんを含む化工でんぷんを代用するのに適した組成物。
- かんきつ類の果実繊維対天然でんぷんの比が1:5〜1:1であることを特徴とする、請求項1記載の組成物。
- かんきつ類の果実繊維が、オレンジ、タンジェリン、ライム、レモン、およびグレープフルーツからなる群より選ばれるかんきつ類の果実から得られることを特徴とする、請求項1記載の組成物。
- かんきつ類の果実繊維が、総食物繊維含有率60〜85重量%を有することを特徴とする、請求項1記載の組成物。
- かんきつ類の果実繊維が、タンパク質を8〜12% (w/w) 含むことを特徴とする、請求項1記載の組成物。
- 天然でんぷんがワキシーでんぷんであることを特徴とする、請求項1記載の組成物。
- 天然でんぷんがもち米粉であることを特徴とする、請求項6記載の組成物。
- 食用添加物を更に含むことを特徴とする、請求項1〜7のいずれか一に記載の組成物。
- 更なる食用添加物が、キサンタンガム、グアーガム、ペクチン、カラギーナン、繊維、大豆タンパクおよびこれらの混合物から選ばれることを特徴とする、請求項8記載の組成物。
- 更なる食用添加物がキサンタンガムであることを特徴とする、請求項8または9記載の組成物。
- 下記の工程:
a) かんきつ類の果実繊維と天然でんぷんとをブレンドし、
b) 工程a)のブレンドを機械的に処理して均質な混合物を得、
c) 混合物を緩やかに撹拌しながらでんぷんの糊化温度まで煮る
を含む、請求項1〜10のいずれか一に記載の組成物を製造する方法 - 剪断処理のようなプロセス条件への天然でんぷんの抵抗を増大させるためのかんきつ類繊維の使用。
- 請求項1〜10のいずれか一に記載の組成物の、食品用途、飼料用途、医薬品または化粧品における使用。
- 請求項1〜10のいずれか一に記載の組成物を含む飲料。
- 請求項1〜10のいずれか一に記載の組成物を含むソース。
