Abstract
1. Композиция, пригодная в качестве заменителя химически модифицированного крахмала, содержащая волокна цитрусовых с влагосвязывающей способностью от 7 до 25 (по весу) и нативный крахмал, выбранный из группы, состоящей из кукурузного крахмала, рисовой муки, крахмала сорго, крахмала тапиоки, муки из пшеницы восковой спелости, картофельного крахмала, свободного от амилозы, и их смеси. ! 2. Композиция по п.1, отличающаяся тем, что весовое соотношение волокон цитрусовых к нативному крахмалу составляет от 1:5 до 1:1. ! 3. Композиция по п.1, отличающаяся тем, что волокна цитрусовых могут быть получены из цитрусовых, выбранных из группы, состоящей из апельсинов, мандаринов, лайма, лимонов и грейпфрутов. ! 4. Композиция по п.1, отличающаяся тем, что волокна цитрусовых имеют общее содержание пищевых волокон от около 60 до 85 вес.%. !5. Композиция по п.1, отличающаяся тем, что волокна цитрусовых содержат от 8 до 12% (по весу) белка. ! 6. Композиция по п.1, отличающаяся тем, что нативный крахмал представляет собой восковый крахмал. ! 7. Композиция по п.6, отличающаяся тем, что нативный крахмал представляет собой муку клейкого риса. ! 8. Композиция по любому предшествующему пункту, отличающаяся тем, что дополнительно включает пищевые добавки. ! 9. Композиция по п.8, отличающаяся тем, что дополнительная пищевая добавка выбрана из группы, состоящей из ксантановой камеди, гуаровой камеди, пектина, каррагена, пищевых волокон, соевого белка и их смесей. ! 10. Композиция по п.9, отличающаяся тем, что дополнительная пищевая добавка представляет собой ксантановую камедь. ! 11. Способ получения композиции по любому предшествующему пункту, включающий стадии: ! a) смеши�
Claims (15)
1. Композиция, пригодная в качестве заменителя химически модифицированного крахмала, содержащая волокна цитрусовых с влагосвязывающей способностью от 7 до 25 (по весу) и нативный крахмал, выбранный из группы, состоящей из кукурузного крахмала, рисовой муки, крахмала сорго, крахмала тапиоки, муки из пшеницы восковой спелости, картофельного крахмала, свободного от амилозы, и их смеси.
2. Композиция по п.1, отличающаяся тем, что весовое соотношение волокон цитрусовых к нативному крахмалу составляет от 1:5 до 1:1.
3. Композиция по п.1, отличающаяся тем, что волокна цитрусовых могут быть получены из цитрусовых, выбранных из группы, состоящей из апельсинов, мандаринов, лайма, лимонов и грейпфрутов.
4. Композиция по п.1, отличающаяся тем, что волокна цитрусовых имеют общее содержание пищевых волокон от около 60 до 85 вес.%.
5. Композиция по п.1, отличающаяся тем, что волокна цитрусовых содержат от 8 до 12% (по весу) белка.
6. Композиция по п.1, отличающаяся тем, что нативный крахмал представляет собой восковый крахмал.
7. Композиция по п.6, отличающаяся тем, что нативный крахмал представляет собой муку клейкого риса.
8. Композиция по любому предшествующему пункту, отличающаяся тем, что дополнительно включает пищевые добавки.
9. Композиция по п.8, отличающаяся тем, что дополнительная пищевая добавка выбрана из группы, состоящей из ксантановой камеди, гуаровой камеди, пектина, каррагена, пищевых волокон, соевого белка и их смесей.
10. Композиция по п.9, отличающаяся тем, что дополнительная пищевая добавка представляет собой ксантановую камедь.
11. Способ получения композиции по любому предшествующему пункту, включающий стадии:
a) смешивания волокон цитрусовых и нативного крахмала,
b) механической обработки смеси со стадии a) с получением гомогенной смеси,
c) нагревания смеси при осторожном перемешивании до температуры желатинизации крахмала.
12. Применение волокон цитрусовых для повышения устойчивости нативного крахмала к условиям обработки, таким как приложение усилия сдвига.
13. Применение композиции по любому из пп.1-10 в качестве добавок в пищевые продукты, кормовые продукты, фармацевтические или косметические продукты.
14. Напиток, содержащий композицию по пп.1-10.
15. Соус, содержащий композицию по пп.1-10.
