Abstract
【解決手段】野菜汁、抹茶およびクロレラなどのクロロフィルを含有する植物組織を緑色系飲料成分として配合し、安定剤としてグルコン酸銅4×10−3〜21.4×10−3重量%およびジェランガム0.01〜0.07重量%またはセルロース系安定剤0.35〜1.0重量%を添加してなる緑色系飲料用組成物とする。

Description
緑色系飲料用組成物に対するジェランガムの含有量は、0.01〜0.07重量%が好ましく、より好ましくは0.02〜0.06重量%であり、さらに好ましくは0.02〜0.05重量%である。このような所定の範囲よりジェランガムの含有量が多ければ、飲料用組成物がゲル化して飲用に好適でなくなり、所定の範囲未満の少量では、沈殿を大量に生じて保存安定性が悪くなり好ましくないからである。
このような所定範囲よりグルコン酸銅の配合量が多ければ、飲料用組成物の風味が悪化して好ましくなく、所定範囲より少なければ緑色安定性が不良となって好ましくない。
この発明で用いるセルロース系安定剤は、市販されている周知のものを用いることができ、具体的には、三栄源エフ・エフ・アイ株式会社製:サンアーティスト(登録商標)PG等の発酵セルロース及びグァーガムの配合製剤を用いることができる。
このような容器充填の緑色系飲料用組成物は、常温で流通や販売されるものであってもよく、チルド状態で流通や販売がなされるものであっても良い。
下記の処方に示す組成の内、香料以外を水に加え、80℃で10分間加熱溶解した後、香料を加え、クエン酸にてpHを3.8に調整し、95℃で30秒間加熱殺菌後にスチール缶に充填し、缶入り野菜・果実ドリンクを得た。
(処方1)
グルコン酸銅(扶桑化学社製:ヘルシャスCu) 7×10−3重量%
ジェランガム(ケルコ社製:ケルコゲルHT) 0.03重量%
クロレラパウダー 0.1重量%
りんご透明7倍濃縮果汁(マインフルーツ社製) 11重量%
ケール汁 20重量%
クエン酸 pH3.8まで
香料(高砂香料製:アップルフレーバー) 0.1重量%
純水(残部)にて全量100重量%とする
[組成物の目視判定]
容器詰飲料を55℃の恒温機内で48時間保持した後、保存前の容器詰飲料を基準として、目視による緑色の状態、沈殿・凝集状態の変化を判定した。
1 鮮やかな緑色で、ほとんど沈殿・凝集が認められない
2 緑色が薄く、やや沈殿・凝集がみとめられる
3 沈殿・凝集が認められる
容器詰飲料の味、喉越しのバランスを成人男女多数のパネラーに判定させ、多数意見を考慮して以下の基準にて評価した。
1 程よい味わいで、喉越しも良い
2 後に引く味があり好ましく思わない
3 味わいが悪く、飲用できない
沈殿・凝集状態、及び味・喉越しの総合的な判断を、以下の基準にて評価し、その点数を表中に示した。
1 目視判定、味共に1であるもの
2 目視判定、味の少なくとも一方が1以外であるもの(但し、総合評価3であ
る場合を除く。)
3 目視判定、味共に3であるもの
下記の処方に示す組成のうち、香料以外を水に加え、80℃で10分間加熱溶解した後、香料を加え、クエン酸にてpHを3.8に調整し、95℃で30秒間加熱殺菌した後にスチール缶に充填し、缶入り野菜・果実ドリンクを得た。
グルコン酸銅(扶桑化学社製:ヘルシャスCu) 7×10−3重量%
セルロース製剤(三栄源エフエフアイ社製:サンアーティストPG) 0.4重量%
りんご透明7倍濃縮果汁(マインフルーツ社製) 11重量%
ケール汁 20重量%

香料(アップルフレーバー:高砂香料製) 0.1重量%
純水(残部)にて全量100重量%とする。
得られた結果を表4に記す。
下記の処方に示す組成のうち、水にジェランガムを攪拌溶解し、80℃まで加熱した。また、水に、乳化剤を加え、70℃で10分間攪拌溶解し、30℃とした後、前記水とジェランガム溶液を加え、更に、砂糖、牛乳、グルコン酸銅、抹茶、香料を添加し、全量補正する。14700KPaにてホモジナイズし、138℃に達温した後、30℃まで冷却し、無菌的処理(過酸化水素、過酢酸、無菌水洗浄)を施されたペットボトルに充填し、キャップで密封され、ペットボトル入り抹茶ミルクを得た。
グルコン酸銅(扶桑化学社製:ヘルシャスCu) 10重量%
ジェランガム(ケルコ社製:ケルコゲルHT) 0.03重量%
乳化剤(三菱化学フーズ社製:菱糖エステルP-1670) 0.06重量%
牛乳 18重量%
砂糖 7重量%
抹茶パウダー(宇治の露製茶社製) 0.2重量%
ビタミンC(日本ロシュ社製) 0.01重量%
香料(抹茶フレーバー:小川香料製) 0.1重量%
純水(残部)にて全量100重量%とする。
得られた結果を表6に記す。
下記の処方に示す組成のうち、水にセルロース製剤を攪拌溶解し、80℃まで加熱する。また、水に、ぶどう糖、麦芽糖を加え攪拌溶解し、前記水とセルロース製剤溶液を加え、更に、グルコン酸銅、抹茶、クエン酸を添加し、全量補正する。90℃で30分間加熱殺菌後にペットボトルに充填し、キャップで密封してペットボトル入り抹茶ドリンクを得た。

Claims (6)
- クロロフィルを含有する植物組織を緑色系飲料成分として配合し、安定剤としてグルコン酸銅およびジェランガムを添加してなる緑色系飲料用組成物。
- 緑色系飲料用組成物100重量%におけるグルコン酸銅の添加量が、4×10−3〜21.4×10−3重量%である請求項1に記載の緑色系飲料用組成物。
- 緑色系飲料用組成物100重量%におけるジェランガムの含有量が、0.01〜0.07重量%である請求項1または2に記載の緑色系飲料用組成物。
- 請求項1または2に記載のクロロフィルを含有する緑色系飲料用組成物において、ジェランガムに代えてセルロース系安定剤を添加してなる緑色系飲料用組成物。
- 緑色系飲料用組成物100重量%におけるセルロース系安定剤の含有量が、0.35〜1.0重量%である請求項4に記載の緑色系飲料用組成物。
- クロロフィルを含有する植物組織が、野菜汁、抹茶およびクロレラから選ばれる1種以上のクロロフィルを含有する植物組織である請求項1〜5のいずれかに記載の緑色系飲料用組成物。
