Abstract
Description
第1のステップとして、ブリックス測定値が少なくとも50、好適には約60まで事前濃縮されたココナッツ水または原液を入手または調合する。特定の実施形態において、本処理はまた、2段階に分割するのではなく約4ブリックスの還元ココナッツ水から70〜85のブリックスまで1段階で実現することもできる。ココナッツ水原液は、真空および蒸発処理を含む公知の濃縮方法により事前処理されていてよい。ココナッツ水原液は、処理されるまで冷凍状態(0°F/−18°C)で保存される。
上述の処理に従い得られた濃縮ココナッツ水は、真水または炭酸水を含む水、果汁、紅茶、典型的なソーダ清涼飲料水、スポーツ飲料等を含むがこれに限定されない任意の適切または望ましい飲料水である希釈液と混合される。好適にはCWCは、4.0〜4.2ブリックスで還元ココナッツ水製品を製造すべく水により再溶解される。特定の実施形態において、100%炭酸ココナッツ水である非酸性清涼飲料水の調合が可能になる。
Claims (15)
- 常温保存可能な濃縮ココナッツ水であって、前記濃縮ココナッツ水のブリックス測定値が少なくとも約70であり、水分活性が0.7未満であり、前記濃縮液が飲用の非濃縮還元溶液に希釈された場合に、得られたココナッツ水が事前濃縮されていないココナッツ水と同様の栄養および味を維持するように、前記濃縮液がココナッツ水の電解質および喉越し感を維持する濃縮ココナッツ水。
- 前記濃縮ココナッツ水のブリックス測定値が約70〜85である、請求項1に記載の濃縮ココナッツ水。
- 前記濃縮ココナッツ水が、冷蔵、他の果汁、添加物、酵素、香味料、着色料または防腐剤の添加を必要とせずに微生物学的に安定している、請求項1に記載の濃縮ココナッツ水。
- 前記濃縮液の水分活性が0.7未満である、請求項1に記載の濃縮ココナッツ水。
- 前記濃縮液が、清涼飲料水販売機から分注された場合に、還元濃縮液に希釈可能である、請求項1に記載の濃縮ココナッツ水。
- ブリックス測定値が約60のココナッツ水原液を選択するステップと、前記ココナッツ水原液を圧力下で1回以上蒸発させて前記ココナッツ水原液の水分活性を0.60〜0.70まで低下させると共にブリックス測定値を少なくとも約70まで上昇させるステップとを含む処理により生成され、前記ココナッツ水が前記濃縮ココナッツ水の風味の唯一の源である常温保存可能な濃縮ココナッツ水。
- ブリックス測定値が約4の還元ココナッツ水原液を選択するステップと、前記ココナッツ水原液を圧力下で1回以上蒸発させて前記ココナッツ水原液の水分活性を0.60〜0.70まで低下させると共にブリックス測定値を少なくとも約70まで上昇させるステップとを含む処理により生成され、前記ココナッツ水が前記濃縮ココナッツ水の風味の唯一の源である常温保存可能な濃縮ココナッツ水。
- 常温保存可能な濃縮ココナッツ飲料水を製造する方法であって、ブリックス測定値が約4の還元ココナッツ水原液を選択するステップと、熱および圧力による多段蒸発処理を用いて前記ココナッツ水原液を濃縮して、ブリックス測定値が少なくとも約70の濃縮ココナッツ水を生成して常温保存可能な濃縮ココナッツ飲料水を製造する方法。
- 常温保存可能な濃縮ココナッツ飲料水を製造する方法であって、ブリックス測定値が約60の還元ココナッツ水原液を選択するステップと、熱および圧力による多段蒸発処理を用いて前記ココナッツ水原液を濃縮して、ブリックス測定値が少なくとも約70の濃縮ココナッツ水を生成して常温保存可能な濃縮ココナッツ飲料水を製造する方法。
- ココナッツ清涼飲料水を調合する方法であって、
ブリックス測定値が少なくとも約70の濃縮ココナッツ水を提供するステップと、
希釈液を提供するステップと、
前記濃縮ココナッツ水および希釈液をカップに分注することによりココナッツ清涼飲料水を生成するステップを含む方法。 - 前記希釈液が真水である、請求項10に記載の方法。
- 前記希釈液が炭酸水である、請求項10に記載の方法。
- 前記濃縮ココナッツ水が冷蔵、他の果汁、添加物、酵素、着色料、香味料または防腐剤の添加を必要とせずに常温保存可能である、請求項10に記載の方法。
- 前記濃縮ココナッツ水を希釈してココナッツ清涼飲料水を生成したとき、得られたココナッツ清涼飲料水が、事前濃縮されていないココナッツ飲料水と同じ栄養、電解質含有量、外観、および味を維持している、請求項10に記載の方法。
- 添加された香味料を更に含んでいる、請求項1に記載の濃縮ココナッツ水。
