Abstract
【課題】 本発明は、安全面及びコスト面においても優れ、小麦粉加工食品を安定して青紫色に着色することのできるビルベリーを添加した小麦粉加工食品及びその着色方法を提供することを目的とするものである。
【解決手段】 本発明は、ビルベリーを全材料の重量に対して5%から30%添加し、小麦粉加工食品を青紫色に着色したことを特徴とするビルベリーを添加した小麦粉加工食品及び収穫したビルベリーを凍結させてから異物を除去する収穫工程と、収穫工程後に冷凍したビルベリーを破砕して香料及び糖分を添加し混合する加工工程と、加工工程後に一定量ごとに袋詰めしたビルベリーを殺菌し金属探知機に掛けて冷凍保管する保管工程と、保管工程後にビルベリーを解凍して小麦粉加工食品に配合する使用工程とからなることを特徴とするビルベリーを添加した小麦粉加工食品の着色方法の構成とした。

Claims (5)
- ビルベリーを全材料の重量に対して5%から30%添加し、小麦粉加工食品を青紫色に着色したことを特徴とするビルベリーを添加した小麦粉加工食品。
- ビルベリーを10%から18%添加したことを特徴とする請求項1に記載のビルベリーを添加した小麦粉加工食品。
- ビルベリーをピューレ、ジュース、ペースト、ソース、濃縮品、生果、冷凍品、チルド品、スプレードライ品、造粒品、フリーズドライ品、ドラムドライ品、ジャム又はフラワーペーストのいずれかとしたことを特徴とする請求項1又は請求項2に記載のビルベリーを添加した小麦粉加工食品。
- 小麦粉加工食品をバターロール、食パン、フランスパン、イングリッシュマフィン、菓子パン、メロン皮、イーストドーナツ、ブリオッシュ、クロワッサン、デニッシュ、パイ、アメリカンマフィン、中華まん、ベーグル、パウンドケーキ、蒸しパン、スポンジケーキ、ホットケーキ、ビスケット、ワッフル、シュー皮又はスコーンのいずれかとしたことを特徴とする請求項1、請求項2又は請求項3に記載のビルベリーを添加した小麦粉加工食品。
- 収穫したビルベリーを凍結させてから異物を除去する収穫工程と、前記収穫工程後に冷凍したビルベリーを破砕して香料及び糖分を添加し混合する加工工程と、前記加工工程後に一定量ごとに袋詰めしたビルベリーを殺菌し金属探知機に掛けて冷凍保管する保管工程と、前記保管工程後にビルベリーを解凍して小麦粉加工食品に配合する使用工程とからなることを特徴とするビルベリーを添加した小麦粉加工食品の着色方法。
