Abstract

Claims (23)
- 安定な水中油型飲料エマルジョンを製造する方法であって、
液滴サイズを有する油を含む油混合物と、飲料乳化剤を含む水性混合物とを組み合わせて、飲料プリエマルジョンを形成し、
前記飲料プリエマルジョンをインライン混合して、前記油の液滴サイズを減少させ、
前記インライン混合後に前記飲料プリエマルジョンを均質化して、均一に分散した飲料エマルジョンを形成する、
各工程を有してなる方法。 - 前記インライン混合が、前記飲料プリエマルジョン中の存在する前記油の液滴サイズを約1マイクロメートルから約12マイクロメートルに減少させるのに十分な混合エネルギーを与えるようにインライン・ミキサー中への前記飲料プリエマルジョンの流量を調節して、該飲料プリエマルジョンを予備状態調節する工程を含むことを特徴とする請求項1記載の方法。
- 前記飲料乳化剤が、アラビアゴム、加工デンプン、ペクチン、キサンタンガム、スクロースモノエステル、ソルビタンエステル、ポリソルベート、モノグリセリド、ジグリセリド、プロピレングリコールエステル、およびそれらの組合せからなる群より選択されることを特徴とする請求項1記載の方法。
- 前記油混合物が、エステルガム、イソ酪酸酢酸スクロース、臭素化植物油、ダンマル樹脂、ロジン、エレミ樹脂、およびそれらの組合せからなる群より選択される増量剤をさらに含むことを特徴とする請求項1記載の方法。
- 前記油が、柑橘油、コーラ油、精油、ココナッツ油、テルペン、およびそれらの組合せからなる群より選択されることを特徴とする請求項1記載の方法。
- 前記水性混合物が、保存料、着色料、および酸味料をさらに含むことを特徴とする請求項1記載の方法。
- 前記保存料が、安息香酸ナトリウム、プロピオン酸ナトリウム、ソルビン酸ナトリウム、ソルビン酸、安息香酸カリウム、ソルビン酸カリウム、およびそれらの組合せからなる群より選択されることを特徴とする請求項6記載の方法。
- 前記着色料が、β−Apo−8’−カロテナール、カンタキサンチン、β−カロテン、Citrus Red No.2、FD&C Red No.28、FD&C Yellow No.10、FD&C Blue No.1、FD&C Blue No.2、FD&C Green No.3、FD&C Red No.3、FD&C Red No.40、FD&C Yellow No.5、FD&C Yellow No.6、グルコン酸第1鉄、オレンジB、リボフラビン、ウルトラマリンブルー、ウルトラマリングリーン、ウルトラマリンバイオレット、レッド、カラメル、およびそれらの組合せからなる群より選択されることを特徴とする請求項6記載の方法。
- 前記酸味料が、クエン酸、リン酸、乳酸、酒石酸、リンゴ酸、フマル酸、アスコルビン酸、およびそれらの組合せからなる群より選択されることを特徴とする請求項6記載の方法。
- 水を保存料、乳化剤、および着色料と混合し、
前記水、前記保存料、前記乳化剤、および前記着色料を高温で混合して、水性混合物を形成し、
前記水性混合物を必要に応じて低温殺菌し、
前記水性混合物を約10℃から約35℃の温度まで冷却し、
前記水性混合物を水で希釈して、希釈混合物を形成し、
前記希釈混合物に酸味料を加え、
飲料増量剤および油を含む増量油混合物を前記希釈混合物と組み合わせて、濃縮飲料を形成し、
前記濃縮飲料を混合して、混合濃縮飲料を形成し、
前記混合濃縮飲料を水で希釈して、希釈濃縮飲料を形成し、
前記希釈濃縮飲料をインライン混合して、該希釈濃縮飲料中に存在する前記油の液滴サイズを減少させ、
記希釈濃縮飲料を均質化して、最終濃縮飲料を形成する、
各工程を有してなる方法によって製造される濃縮飲料。 - 前記油が、柑橘油、コーラ油、精油、ココナッツ油、テルペン、およびそれらの組合せからなる群より選択されることを特徴とする請求項10記載の方法。
- 前記飲料乳化剤が、アラビアゴム、加工デンプン、ペクチン、キサンタンガム、スクロースモノエステル、ソルビタンエステル、ポリソルベート、モノグリセリド、ジグリセリド、プロピレングリコールエステル、およびそれらの組合せからなる群より選択されることを特徴とする請求項10記載の方法。
- 前記増量剤が、エステルガム、イソ酪酸酢酸スクロース、臭素化植物油、ダンマル樹脂、ロジン、エレミ樹脂、およびそれらの組合せからなる群より選択されることを特徴とする請求項10記載の方法。
- 前記油が、柑橘油、コーラ油、精油、およびそれらの組合せからなる群より選択されることを特徴とする請求項10記載の方法。
- 前記保存料が、安息香酸ナトリウム、プロピオン酸ナトリウム、ソルビン酸ナトリウム、ソルビン酸、安息香酸カリウム、ソルビン酸カリウム、およびそれらの組合せからなる群より選択されることを特徴とする請求項10記載の方法。
- 前記着色料が、β−Apo−8’−カロテナール、カンタキサンチン、β−カロテン、Citrus Red No.2、FD&C Red No.28、FD&C Yellow No.10、FD&C Blue No.1、FD&C Blue No.2、FD&C Green No.3、FD&C Red No.3、FD&C Red No.40、FD&C Yellow No.5、FD&C Yellow No.6、グルコン酸第1鉄、オレンジB、リボフラビン、ウルトラマリンブルー、ウルトラマリングリーン、ウルトラマリンバイオレット、レッド、カラメル、およびそれらの組合せからなる群より選択されることを特徴とする請求項10記載の方法。

- 安定な水中油型飲料エマルジョンを製造する方法であって、
液滴サイズを有する油を含む油混合物と、飲料乳化剤を含む水性混合物とを組み合わせて、飲料プリエマルジョンを形成し、
前記飲料プリエマルジョンをインライン混合して、前記油の液滴サイズを減少させる、
各工程を有してなる方法。 - 前記プリエマルジョンを二回目のインライン混合して、均一に分散した飲料エマルジョンを形成する工程をさらに含むことを特徴とする請求項18記載の方法。
- 均一に分散した飲料エマルジョンを製造するための装置であって、
液滴サイズを有する油を含む油混合物の供給源、
飲料乳化剤を含む水性混合物の供給源、
前記油混合物を前記水性混合物中に分散させて、安定な飲料プリエマルジョンを形成するためのインライン混合装置、および
前記安定な飲料プリエマルジョンを均質化して、均一に分散した飲料エマルジョンを形成するための、前記インライン混合装置と流体連結したホモジナイザ、
を備えた装置。 - 均一に分散した飲料エマルジョンを製造するための装置であって、
液滴サイズを有する油を含む油混合物の供給源、
飲料乳化剤を含む水性混合物の供給源、および
前記油の液滴サイズを減少させるように前記油混合物を前記水性混合物中に分散させて、均一に分散した飲料エマルジョンを形成するためのインライン混合システム、
を備えた装置。 - 前記インライン混合システムがインライン混合装置を含むことを特徴とする請求項21記載の装置。
- 前記インライン混合システムが流体連結した複数のインライン混合装置を含むことを特徴とする請求項21記載の装置。
