【解決手段】 無脂乳固形分が1.0〜4.0質量%である酸性乳飲料において、ポリデキストロースと砂糖とを含有することを特徴とする酸性乳飲料。

Description
(1)牛乳、山羊乳、羊乳、豆乳等の動物および植物由来の液状乳、脱脂粉乳、全粉乳あ
るいは粉乳、濃縮乳から還元した乳等に、乳酸菌やビフィズス菌等の微生物を作用
させて得られる生菌タイプの酸性原料乳。
(2)上記酸性原料乳(1)を殺菌して得られる死菌タイプの酸性原料乳。
(3)上記乳等に単に各種酸味剤を添加して得られる酸性原料乳。
酸性乳飲料の製造(1):
脱脂粉乳14.9質量%、ぶどう糖3.5質量%を溶解した水溶液を121℃で3秒間プレート殺菌後、ラクトバチルス・カゼイ(Lactobacillus casei)のスターターを接種し、pH3.6になるまで培養し、冷却して発酵物を得た。次いで、この発酵物を均質化機を用いて15MPaで均質化し、その49.6重量部に別途調整した下記組成のシロップ50.4重量部と水115重量部とをそれぞれを混合し、比較品1〜3を得た(無脂乳固形分3.2%)。なお、シロップは下記の成分を水に溶解し、112℃で10秒間プレート殺菌した後冷却して得た。また、シロップ1は比較品1に、シロップ2は比較品2に、シロップ3は比較品3に使用した。

シロップ2:ポリデキストロース46.8質量%、アスパルテーム0.27質量%、
ペクチン1.3質量%
シロップ3:ポリデキストロース46.8質量%、アスパルテーム0.27質量%、
カルボキシメチルセルロース(CMC)2.1質量%

酸性乳飲料の製造(2):

Claims (6)
- 無脂乳固形分が1.0〜4.0質量%である酸性乳飲料において、ポリデキストロースと砂糖とを含有することを特徴とする酸性乳飲料。
- 100mlあたりのカロリー値が40〜58kcalである請求項第1項記載の酸性乳飲料。
- ポリデキストロースと砂糖との含有比率が、重量比で10:90〜65:35である請求項第1項または第2項記載の酸性乳飲料。
- 実質的に他の安定剤を含まないものである請求項第1項ないし第3項の何れかの項記載の酸性乳飲料。
- 無脂乳固形分が1.0〜4.0質量%である酸性乳飲料にポリデキストロースと砂糖とを配合することを特徴とする酸性乳飲料の製造方法。
- 無脂乳固形分が1.0〜4.0質量%である酸性乳飲料にポリデキストロースと砂糖とを配合することを特徴とする酸性乳飲料の品質劣化防止方法。
