Claims (11)
- 骨抜きした骨抜きのカットを提供する工程;
該カット及び骨を別々に保存処理する工程;
調理用結合を用い、この保存処理された骨を該カットの外側で該カットの肉と密接に接触させてその骨抜きによって形成された空洞に結合させる工程;及び
この結合したカットを調理する工程;
を包含することを特徴とする加工食肉の製造方法。 - 保存処理された前記骨が前記カットを提供した家畜とは異なる家畜に由来する請求項1記載の加工食肉の製造方法。
- 前記カットが保存処理の前に機械的伸長又は再吊り下げによって再成形される請求項1又は2記載の加工食肉の製造方法。
- 前記保存処理が前記カットと前記骨との間で同じ又は異なる請求項1乃至3のいずれか1項記載の加工食肉の製造方法。
- 前記調理用結合が天然又は合成のケーシング若しくはフィルム、ネット又はクロスから選択される請求項1乃至4のいずれか1項記載の加工食肉の製造方法。
- 前記調理がスモーク及びロースト、蒸し加熱又は煮込みのような加熱調理の一つ以上からなる請求項1乃至5のいずれか1項記載の加工食肉の製造方法。
- 前記カットの肉と前記骨又は骨代用物との間の接触の密接性は、骨強化香料の有効成分の拡散を強化するように選択された物質の添加によって補われる請求項1乃至6のいずれか1項記載の加工食肉の製造方法。
- 前記物質が食物の酸等から選択される請求項7記載の加工食肉の製造方法。
- 前記物質が香味賦形剤を含有するか、又は香味賦形剤からなる請求項7又は8記載の加工食肉の製造方法。
- 前記賦形剤が果汁、クーリ等から選択される請求項9記載の加工方法の製造方法。
- 請求項1乃至10のいずれか1項記載の方法によって生成される場合の加工食肉製品。
