Claims (10)
1. Postupak pakiranja proizvoda koji se temelje na porcijama ribe u čvrstom obliku, naznačen time što obuhvaća barem:
- korak uvođenja (120) jedne ili više porcija sirove ribe u čvrstom obliku u smrznutom stanju u barem djelomice fleksibilno pakiranje;
- korak izvođenja mehaničkog vakuuma (130) unutar pakiranja ispunjenog jednom ili više porcija ribe u čvrstom obliku u smrznutom stanju;
- korak zatvaranja (140) pakiranja na način da tvori zatvoreno pakiranje koje obuhvaća jednu ili više porcija ribe u čvrstom obliku u smrznutom stanju;
- korak steriliziranja toplinom (150) zatvorenog pakiranja koje obuhvaća jednu ili više porcija ribe u čvrstom obliku u smrznutom stanju u autoklavu,
pri čemu jedna ili više porcija ribe u čvrstom obliku ostaje u smrznutom stanju tijekom čitavog postupka pakiranja, drugim riječima tijekom koraka uvođenja (120) u pakiranje, tijekom koraka izvođenja mehaničkog vakuuma (130), tijekom koraka zatvaranja (140) do početka koraka sterilizacije toplinom (150) u autoklavu,
koraka sterilizacije toplinom (150) u autoklavu u kojem se provodi kuhanje jedne ili više porcija ribe u čvrstom obliku počevši od smrznutog stanja.
2. Postupak sukladno zahtjevu 1, naznačen time što su zatvoreni paketi poslani na sterilizaciju (150) s jednom ili više porcija ribe u čvrstom obliku u smrznutom stanju s temperaturom jezgre od najviše -5°C.
3. Postupak sukladno bilo kojem od prethodnih zahtjeva naznačen time što također obuhvaća korak doziranja (125) začinske tekućine, kao na primjer ulja, otopine soli ili aromatičnih disperzija, kojima je moguće dodana sol, i/ili druge namirnice, poput povrća ili drugih.
4. Postupak sukladno bilo kojem od prethodnih zahtjeva naznačen time što je barem djelomično fleksibilno pakiranje nepropusno za plinove, vodu, mikroorganizme i svjetlost.
5. Postupak sukladno zahtjevu 4, naznačen time što je barem djelomice fleksibilno pakiranje vrećica od višeslojnog materijala koja obuhvaća sloj aluminija ili drugog materijala odgovarajućih obilježja.
6. Pakiranje koja sadrži jednu ili više porcija ribe u čvrstom obliku (10), kuhane tijekom sterilizacije toplinom u autoklavu, s opcionalnim dodavanjem samo začinske tekućine i/ili drugih namirnica, pri čemu je pakiranje komercijalno sterilno, naznačeno time što su barem jedna ili više porcija ribe u čvrstom obliku (10) sadržane u vakuumu u barem djelomice fleksibilnom pakiranju i sa skupinama mišića koje su u osnovi nedirnute i mogu se međusobno odvojiti.
7. Pakiranje sukladno zahtjevu 6, naznačeno time što također obuhvaća malu količinu tekućine za kuhanje (11), bistre i čiste, i/ili minimalnu količinu proteina albumina (14) eksudata iz jedne ili više porcija ribe u čvrstom obliku (10) tijekom kuhanja, ponajviše uz površinu jedne ili više porcija ribe u čvrstom obliku (10).
8. Pakiranje sukladno zahtjevu 6 ili 7, naznačeno time što jedna ili više porcija ribe u čvrstom obliku (10) imaju meku konzistenciju zbog upijanja otopine soli.
9. Pakiranje sukladno bilo kojem od zahtjeva 6 do 8, naznačeno time što je barem djelomice fleksibilno pakiranje nepropusno za plinove, vodu, mikroorganizme i svjetlost.
10. Pakiranje koje obuhvaća porcije ribe u čvrstom obliku (10), kuhane tijekom sterilizacije toplinom u autoklavu, naznačeno time što je načinjeno sukladno postupku sukladno bilo kojem od zahtjeva 1 do 5.
