Abstract

787,080. Bread-making. SPOONER FOOD MACHINERY ENGINEERING CO., Ltd. Feb. 8, 1956 [Feb. 23, 1955], No. 5368/55. Class 28 (1). [Also in Group XII] Dough products, prior to baking, are passed on a conveyer 2 through a steaming chamber 1 having a downwardly extending baffle arranged above the path of the products at the entrance to the steaming chamber and inwardly of an adjacent suction duct which is connected to an exhaust fan drawing air over the baffle and withdrawing escaping steam. Chamber 1 is heated externally by a heated gaseous medium circulated by a fan through a duct, controlled by dampers, to a pressure chamber 3 from which it is projected on to the bottom of chamber 1 through nozzles 4. Steam is fed to the chamber through pipes 6 having apertures placed so as to project the steam as indicated by arrows 7. A baffle 8 with a hinged flange 9 is secured to the steaming chamber roof adjacent the entrance and extending across an opening 12 leading to a suction fan 11. The exit of the steaming chamber is defined by a baffle comprising a flap 16 pivoted at 17 near the oven roof. The baffles may be mounted on spindles and operated by either hand wheels or levers which carry locking devices to hold the baffles in any position. Baffle 8, 9 may be replaced by a baffle like baffle 16, which latter may be replaced by a thin flexible curtain. The Provisional Specification also describes the use of a fixed baffle and the heating of chamber 1 from above as well as below.
