1413941 Baking ovens R C PARKES 4 Jan 1974 00446/74 Heading A2A A baking oven 10 is subdivided into a steaming compartment 16 and a baking compartment 10 and has a conveyor 12 which carries a plurality of baking trays 14 for baking purposes. The steaming and baking areas 16, 18 are each provided with a gas or oil burner 20, 21, which serve to heat the respective return air plenums 22, 24 positioned down stream from the respective heated air plenums 26, 28. Circulating fans 30, 32 positioned within the respective steaming area 16 and baking area 18 each have their respective suctions connected to a return air plenum 22, 24 to receive the heated air from within the areas 16, 18. The fans 30, 32 each discharge horizontally across their respective fan discharge plenums 34, 35 which direct the heated air through heated air plenums 26, 28 for baking purposes. The oven walls 36, 38 are each provided with air flow control means in the form of a plurality of air discharge nozzles 40, 42 which introduce the heated air uniformly over the entire surface of the oven walls 36, 38. The oven walls 44, 46 are similarly provided with a plurality of air intake nozzles 48, 50. Thus heated air from the fans 30, 32 enters the steaming area 16 and baking area 18 horizontally throughout the entire height and width of the areas 16 and 18 through the action of air discharge nozzles 40, 42. The air travels horizontally across the steaming and baking areas and enters the opposed air intake nozzles 48, 50 which serve to encourage the heated air to travel horizontally across the oven interior areas. In this manner, the air temperature at anv chosen elevation within the oven interior will be held substantially constant.
