762,677. Cooling bread. HUMIDITY CONTROL Ltd. Nov. 12, 1954 [Nov. 12, 1953], No. 31389/53. Class 29 A bread cooling plant, wherein hot loaves are passed through a chamber or tunnel divided into zones, is provided with means for conditioning air drawn from the atmosphere and supplying it to each zone and means for individually controlling the condition of the air in each zone as to its volume, velocity, temperature and relative humidity. The zones may be defined by baffle plates 12 or merely by the differing condition of air supplied thereto. Adjacent each zone is placed an automatically controlled plant taking fresh filtered air from the atmosphere or from a main filtered supply serving all zones. The plant comprises fan and humidifying means 4, a :supply duct 5, an extraction duct 6, recirculation air ducts 7 and dampers 8 for mixing fresh and recirculated air. The loaves may be carried through successive zones on trolleys, racks or trays. Alterna,- tively, the loaves may be carried on a swing tray conveyer arranged, e.g. as shown in Figs. 2, 3 or 5. In an arrangement similar to that shown in Fig. 3, the chamber may be elongated vertically. Specifications 509,533, 610,533 and 670,576 are referred to.
