Abstract
Aqueous emulsions of oils, fats or waxes, particularly for use as or in making salad dressings, butter substitutes, salves or lotions, are prepared by the use, as emulsifying and stabilizing agent, of metarabic acid. For example, to a 5 per cent aqueous solution of metarabic acid one to four or more parts of oil or liquefied fat may be added slowly with stirring; the resulting emulsion may be diluted with water or aqueous solutions.ALSO:Aqueous emulsions of oils, fats or waxes, for use as or in making salad dressings, butter substitutes, salves, or lotions are prepared with the aid of metarabic acid. For example to a 5 per cent solution of the acid 1-4 or more parts of oil or liquified fat may be added with stirring and the product diluted with water or aqueous solutions.
