Preserving butter, margarine, and like emulsions.-The process of the parent Specification is applied to butter, margarine and similar waterin-oil or oil-in-water emulsions having a small content of casein or other protective substance. Products of a paste-lilie consistency are obtained, and on kneading with water these products will absorb the water to form or reproduce a substance of butter-like nature.
