Abstract

1,184,363. Food smoking kiln. AFOS Ltd. 16 Aug., 1968 [20 May, 1967], No. 23526/67. Heading A2D. A kiln for smoking food such as fish comprises a curing chamber 14 having a vertical duct 20 opening into its upstream end and a second vertical duct 24 opening out of its downstream end in which is mounted a circulation fan 26 and which is provided at its upper end with an exhaust outlet 30 controlled by an adjustable damper 32, a top duct 12 connecting the ducts 20, 24, a smoke producer 10 opening into the top duct 12 and a fresh air inlet 16 opening into the top duct 12 which is controlled by an inlet damper 18 responsive to movement of the outlet damper 32. In operation the fan 26 sucks an air stream of a smoke-air mixture down past a thermostatically controlled electric heater 36 through the vertical duct 20 and, via a diffuser wall 22, through the chamber 14 into a fan inlet 48. The air stream is then propelled up the vertical duct 24, when a proportion passes to the exhaust outlet 30, depending on the extent the damper 32 is opened, and the remainder circulates back to the duct 20 via the duct 12. Aerofoils or turning vanes (not shown) may be located in the duct 12. The inlet damper 18 is self balancing about a pivot so as to be normally closed, but opens automatically and proportionally in response to the reduction in air pressure produced in the kiln when the damper 32 is opened while the fan 26 is operating.
