Abstract

A mix, which may be blended with water to give a dough for the production of potato chips, comprises a major proportion of ungelatinised potato powder and a minor proportion of ungelatinised potato starch. The mix may also contain another ungelatinised edible starch, such as rice, tapioca, or corn starch, and shortening. The mix may be blended with water to form a dough, which is rolled into a ribbon, subjected to steam and heat to gelatinise the starch, and the dough then dried. The dried dough may be fried to provide a crisp potato chip.
