L’invention concerne un procédé de production d’un mélange de 5-hydroxyméthylfurfural et de glucose à partir d’une charge contenant du fructose en présence d'au moins un solvant polaire aprotique et d’au moins un catalyseur de déshydratation, procédé dans lequel la température de réaction est inférieure à 90 °C.
