L'invention concerne un procédé de production de 5-hydroxyméthylfurfural à partir d'une charge contenant du fructose en présence d'au moins un solvant polaire aprotique et d'au moins un catalyseur de déshydratation, procédé dans lequel la concentration instantanée en fructose est inférieure ou égale à 5,0%pds.
