Abstract
La présente invention a pour objet un procédé de fabrication de crèmes glacées renfermant une dispersion de petits morceaux de glace ou glaçons constitués de crème glacée, moelleuse, moelleuse, mélangée avec des petits glaçons obtenus par broyage de blocs de glace. Elle est caractérisée en ce que l'on prépare lesdits blocs de glace par congélation d'un liquide comestible congelable, refroidit lesdits glaçons par contact avec un réfrigérant, puis mélange lesdits petits glaçons avec la crème glacée demi-dure.
