Abstract
Procédé de préparation de fruits et de légumes précuits. Il consiste à laver des fruits ou des légumes crus et non pelés, puis à les faire cuire à coeur, sans détérioration de leurs tissus superficiels. A cet effet, la température de cuisson est inférieure à la température à laquelle un décollement des tissus superficiels des fruits ou des légumes se produirait si ces fruits ou légumes étaient cuits à coeur à cette température de décollement. Les fruits ou légumes ainsi cuits sont ensuite chauffés à l'air. Domaine d'application : préparation de fruits et de légumes précuits.
