Abstract
PURPOSE:To prepare a high-quality fiber-enriched food by adding edible fibers separated from beetroots to processed or cooked foods such as noodles, bread, baked cake, etc. CONSTITUTION:Beetroots are chopped to small pieces and extracted with hot water of 65-70 deg.C to remove saccharides and other soluble components. The edible fibers obtained by drying, crushing and sieving the residue obtained above are added to the raw material of processed or cooked foods such as noodles, bread, baked cake, jam, fish paste product, croquette, etc.
