Abstract
L'invention concerne les industries alimentaires. Elle a pour objet une composition se prêtant au filage à sec qui comprend un mélange aqueux des solides du lait dans lequel le rapport pondéral de la caséine à l'eau est de 0,3 à 0,7, le rapport des ions calcium à la caséine est de moins de 0,85 millimole d'ions calcium par g de caséine et le pH est de 5,0 à 6,6. Cette composition est préférée pour la fabrication d'aliments enrichis en protéine, par exemple ayant un arôme de fromage, ou de viande reconstituée et, en particulier, de croquettes de volaille.
