Abstract
PURPOSE:To enable processing of a compound derived from hemoferrum- containing hemoglobin into a tasty and readily edible state, by adding muscovado derived from hemoferrum-containing hemoglobin. CONSTITUTION:A compound derived from hemoferrum-containing hemoglobin is obtained by hemolyzing erythrocyte of animal blood, modifying, enzymatically decomposing hemoglobin with a protease such as alkalase(R), taking out a hemoferrum-containing fraction and drying. To take out the hemoferrum- containing fraction, there is two methods. One is subjecting a fraction containing no hemoferrum to ultrafiltration and the other is reducing pH to isoelectric point of protein after enzymatic reaction and collecting a fraction containing settled heme by a centrifugal separator. 1pt.wt. of the prepared compound is blended with >=about 0.25pt.wt. muscovado sold on the market. Consequently, bitterness, fish-like taste and metallic taste resulting from hemoferrum can be eliminated and the compound is made into a tasty and readily edible state.
