Abstract

L'invention concerne les industries alimentaires. Elle a pour objet un procédé de traitement des fruits et légumes visant à améliorer leur durée de conservation utile et/ou réduire leur perte d'humidité par traitement au moyen d'une solution ou suspension aqueuse d'un ou plusieurs esters de saccharose d'acides gras, et éventuellement par séchage. Le procédé est appliqué par préférence au traitement des bananes, aubergines, citrons, oranges, ananas, poivrons, concombres, aulx et kiwis, éventuellement en association avec un traitement au moyen de natamycine.
