PROCEDIMIENTO PARA LA FABRICACION DE UNA BEBIDA GASEOSA AZUCARADA, TIPO SODA AROMATIZADA. SE REALIZA UNA MEZCLA DE AGUA, AZUCAR, LEVADURAS Y UN ACIDIFICANTE, TAL COMO CREMA DE TARTRATO. SE AGREGAN EXCITADORES DE FERMENTACION,TALES COMO FOSFATO AMONICO Y TIAMINA. SE DEJA QUE SE EFECTUE LA FERMENTACION, A UNA TEMEPERATURA DE 30 A 35 C, DURANTE UN TIEMPO ENTRE 10 Y 20 HORAS, HASTA QUE EL 15 POR 100 DEL AZUCAR INICIAL SE HAYA TRANFORMADO EN ALCOHOL. SE DETIENE LA FERMENTACION POR REFRIGERACION BRUSCA A UNA TEMPERATURA DE 5 A 6 C. SE REALIZA UNA FILTRACION SOBRE PLACA, PASANDO LA CONCENTRACION DE LEVADURAS DE 10-9 A 10-4 CELULAS POR LITRO. SE AÑADEN OPCIONALMENTE AROMAS Y JUGOS DE FRUTAS. SE REALIZA UNA EXTRACCION ISOBARA. SE REALIZA UN PROCESO DE PASTEURIZACION.
