Abstract

Método de preparar cerveza de estabilidad mejorada, caracterizado por: a) bracear cebada molida, opcionalmente en presencia de enzimas de fermentación añadidas, o cebada malteada en agua, con calentamiento escalonado, utilizando una cepa de cebada con un bloqueo genético inherente, parcial o completo, de la síntesis de antocianógenos y/o de la síntesis de catequinas en la cebada, b) filtrar el extracto producido, descrito como mosto, con rociado con agua, c) hervir con lúpulo o extracto de lúpulo, d) fermentar con un microorganismo del género saccharomyces, y e) someter el fermentado a almacenaje en frío, filtración y envasado.
