Abstract

Recubrimiento comestible para la conservación de trozos de fruta, su proceso de fabricación y de aplicación, donde el recubrimiento se aplica sobre la fruta mediante una primera solución acuosa de un alginato de una alta viscosidad superior a 250 mPa.s y que presenta una baja concentración de entre 0,05% a 1% en peso respecto del peso total de la primera solución acuosa, y mediante una segunda solución acuosa que incorpora un agente de entrecruzamiento de ascorbato de calcio, o de lactato de calcio, para provocar la gelificación del alginato, y que incorpora ácido cítrico como agente antioxidante, o una combinación de ácido cítrico y ascorbato de sodio, pudiendo contener adicionalmente la segunda solución acuosa ácido málico como agente antimicrobiano, donde el ácido cítrico y en su caso el ácido málico se comportan como quelantes de iones metálicos.
