CONSISTE EN EVAPORAR UNA SOLUCION ACUOSA DE LACTITOL HASTA UNA CONCENTRACION ENTRE 75 Y 88% EN PESO, ENFRIAR LA MEZCLA RESULTANTE A UNA TEMPERATURA QUE OSCILA ENTRE 30 Y 75GC, SUBSIGUIENTEMENTE SEPARAR LOS CRISTALES DE LACTITOL MONOHIDRATO A PARTIR DE LAS AGUAS MADRES Y SUBSIGUIENTEMENTE SECAR CON AIRE QUE TIENE UNA TEMPERATURA INFERIOR A 120GC Y UNA HUMEDAD RELATIVA ENTRE 0 Y 40%, DURANTE UN PERIODO DE TIEMPO MENOR QUE 24 HORAS. EL PRODUCTO OBTENIDO ES UTIL COMO EDULCORANTE EN PRODUCTOS DIETETICOS, CONFITES, ARTICULOS DE PANADERIA, CEREALES, POSTRES, COMPOTAS, BEBIDAS, CHOCOLATE, GOMA DE MASCAR, HELADOS Y PASTA DENTIFRICA.
