- the channels 13 have the function of reducing the contact surface between the side walls and the food to a minimum, when the latter, for example, a piece of meat, has elevated dimensions to fill the whole tray 1. Furthermore, the channels 13 allow both the airing of the surface of the food and the draining of the fluids released therefrom.

- the tray 1 according to the invention allows a better preservation of the organoleptic qualities and shelf life of the food product, especially in the case of red meats, but also for white meats and fish.
- packs of red and white meats or fish kept in a fridge for a period of 2 - 3 days (average shelf life time in large retail for foods packed in sales points with a stretch film) showed no traces of darkening (phenomenon particularly visible in traditional packs of red meats) and, surprisingly, nor did they show any significant alteration in the characteristic smell of the fresh product.

Claims (14)
- Schale (1) für Lebensmittel, insbesondere für rotes und weißes Fleisch und Fisch, umfassend einen Boden (2), Seitenwände (3a, 3b, 3c, 3d), welche sich in einer Höhe von dem Boden (2) erstrecken, und einen Umfangsrand (4), wobei der Boden (2) eine Mehrzahl von Erhebungen (7) umfasst, welche eine Seitenfläche (8) und eine obere Fläche (9) umfassen, wobei die obere Fläche (9) eine oder mehrere Nuten (10) umfasst, dadurch gekennzeichnet, dass die obere Fläche (9) der Erhebungen (7) eine oder mehrere Kerben (11) umfasst, welche vorzugsweise eine kleinere Tiefe aufweisen als diejenige der einen oder der mehreren Nuten (10).
- Schale (1) nach Anspruch 1, wobei die Erhebungen (7) eine im Wesentlichen zylindrische Form oder eine ovale, quadratische oder rechteckige Planform aufweisen.
- Schale (1) nach einem der Ansprüche 1 bis 2, wobei die obere Fläche (9) der Erhebungen (7) zwei Nuten (10) umfasst, welche parallel zueinander angeordnet sind.
- Schale (1) nach einem der Ansprüche 1 bis 3, wobei die Erhebungen (7) eine geordnete Anordnung aufweisen, wie beispielsweise entlang paralleler Reihen.
- Schale (1) nach einem der Ansprüche 1 bis 4, wobei der Boden (2) in den Räumen zwischen einer Erhebung (7) und den benachbarten eine Mehrzahl von Blindlöchern oder Bohrlöchern (12) umfasst, welche dazu eingerichtet sind, durch Kapillarwirkung die Fluide zu halten, welche durch die Lebensmittel freigegeben werden.
- Schale (1) nach einem der Ansprüche 1 bis 5, wobei die Seitenwände (3a, 3b, 3c, 3d) Kanäle (13) umfassen.
- Schale (1) nach Anspruch 6, wobei die Kanäle (13) in einer Bedingung einer Parallelität angeordnet sind, wobei sie vertikal oder schräg angeordnet sind, oder die Kanäle (13) kreuzweise angeordnet sind.
- Schale (1) nach Anspruch 6 oder 7, wobei die Kanäle (13) den Umfangsrand (4) mit dem Boden (2) nahe zu den Erhebungen (7) verbinden oder an dem Übergangspunkt der Seitenwände (3a, 3b, 3c, 3d) zu dem Boden (2) enden.
- Schale (1) nach einem der Ansprüche 1 bis 8, wobei der Boden (2) einen oder mehrere Abschnitte (14) umfasst, welche von Erhebungen (7) und Löchern oder Bohrlöchern (12) frei sind, und/oder einen oder mehrere Abschnitte (15) umfasst, welche von nur Löchern oder Bohrlöchern (12) frei sind.
- Schale (1) nach einem der Ansprüche 1 bis 9, wobei die gesamte Lebensmittel halternde Fläche, welche als die gesamte Fläche bestimmt ist, welche von der Summe der einzelnen oberen Flächen (9) der Erhebungen (7) abgeleitet wird, ohne den Abschnitt, welcher durch die Nuten (10) und durch die Kerben (11) eingenommen wird, wo vorhanden, von 35 % bis 45 % der gesamten Fläche des Bodens (2) beträgt.
- Schale (1) nach einem der Ansprüche 1 bis 10, wobei die Erhebungen (7) eine obere Fläche (9) von 80 bis 100 mm2 und eine Seitenfläche (8) einer Höhe von 3 bis 7 mm aufweisen.
- Schale (1) nach einem der Ansprüche 1 bis 11, wobei die Erhebungen (7) eine rechteckige Planform aufweisen und eine Nut (10) und eine Kerbe (11) umfassen, welche in einem Kreuz platziert sind, wobei die Kerbe (11) die gleiche Tiefe wie die Nut (10) oder eine geringere Tiefe aufweist.
- Schale (1) nach Anspruch 12, wobei die Nut (10) und die Kerbe (11) entsprechende entgegengesetzte Seiten der Erhebungen (7) verbinden.
- Schale (1) nach Anspruch 12 oder 13, wobei die obere Fläche (9) der Erhebungen (7) flach ist.
