    la zone de cuisson s'étend complètement derrière l'ouverture de chargement (12) du moufle pour four de cuisson (2, 64) et la zone d'échange s'étend complètement devant l'ouverture de chargement (12) du moufle pour four de cuisson (2, 64), et les dispositifs de retenue (26, 118) se trouvent respectivement complètement devant le plan d'ouverture du moufle pour four de cuisson (2, 64) ou, et un premier et un deuxième guide formant respectivement un dispositif de guidage télescopique double (16), les premiers guides étant réalisés sous forme de dispositifs de guidage télescopiques qui comprennent respectivement deux rails (22, 24 ou 60, 62) mobiles l'un par rapport à l'autre, pour recevoir les dispositifs de retenue (26) de manière mobile ou immobile au niveau du rail mobile (24 ou 62) ou sur celui-ci, et les deuxièmes guides étant réalisés sous forme de dispositifs de guidage télescopiques qui comprennent respectivement deux rails (18, 20) mobiles l'un par rapport à l'autre.
  2. Moufle pour four de cuisson selon la revendication 1, dans lequel les supports (14, 66, 112)
    - sont réalisés sous forme d'entretoises et/ou de cadre et/ou de grille et/ou de tôles et
    - peuvent être retirés du moufle pour four de cuisson avec les dispositifs de retenue.
  3. Moufle pour four de cuisson selon la revendication 2, dans lequel le cadre (66, 112) peut être posé sur la partie inférieure (6) et en particulier entoure un corps chauffant à chaleur inférieure disposé au-dessus de la partie inférieure (6) et fait saillie vers le haut.
  4. Moufle pour four de cuisson selon l'une des revendications 1 à 3, dans lequel le(s) dispositif(s) de retenue (26, 118)
    - comprend/comprennent des premiers éléments façonnés (32, 36, 38, 44) qui coopèrent avec des deuxièmes éléments façonnés (34, 40, 46, 48) des supports de produits à cuire (30), afin de fixer leur plan d'accrochage et leur position horizontale, et
    - comprend/comprennent une zone d'insertion supportant vers le bas la zone arrière des supports de produits à cuire (30) et
    - comprend/comprennent une zone supportant vers le haut la zone arrière des supports de produits à cuire (30) et
    - comprend/comprennent une zone qui fixe dans la direction horizontale la zone arrière des supports de produits à cuire (30), et
    - est/sont disposé(s) sur les premiers guides de manière fixe ou libérable par l'utilisateur et/ou
    - peu(ven)t être placé(s) par le haut sur les premiers guides et/ou peu(ven)t être introduit(s) entre les premiers guides et/ou peu(ven)t être poussé(s) avec complémentarité de forme par l'avant sur les premiers guides et peu(ven)t être accroché(s) aux premiers guides et
    - peu(ven)t être retiré (s) du moufle pour four de cuisson avec le support et
    - est/sont des peignes de retenue.
  5. Moufle pour four de cuisson selon l'une des revendications 1 à 4, dans lequel, aux supports de produits à cuire (30) et/ou à des groupes de supports de produits à cuire (30),
    - il est associé respectivement au moins un dispositif de retenue (26, 118) ou
    - il est associé respectivement au moins deux dispositifs de retenue reliés les uns aux autres (26, 118) ou
    - il est associé respectivement au moins deux dispositifs de retenue (26, 118) indépendants les uns des autres, qui peuvent être reliés au moyen des supports de produits à cuire (30) ou
    - sont déplaçables horizontalement indépendamment les uns des autres avec les dispositifs de retenue (26, 118).
  6. Moufle pour four de cuisson selon la revendication 5, dans lequel les liaisons entre les dispositifs de retenue (26, 118)
    - sont réalisées sous forme de barres (28) et/ou de cadres horizontaux (70, 86) et/ou de plaque(s) horizontale(s) et/ou d'éléments de manipulation, en particulier d'éléments de manipulation en matière synthétique et
    - peuvent être placés sur les guides et/ou peuvent être amenés entre les guides et/ou peuvent être poussés avec complémentarité de forme par l'avant sur les guides et/ou peuvent être accrochés aux guides et/ou
    - forment des éléments inférieurs.
  7. Moufle pour four de cuisson selon l'une des revendications 5 à 6, dans lequel les dispositifs de retenue (26, 118)
    - sont disposés de manière fixe ou libérable par l'utilisateur au niveau des liaisons par complémentarité de forme et/ou à force par enfichage, serrage, vissage, enclipsage ou fermeture à baïonnette et sont pivotants entre une position au moins sensiblement verticale et une position au moins sensiblement horizontale et
    - les liaisons entre les dispositifs de retenue sont reliées fixement ou de manière libérable par l'utilisateur aux guides par complémentarité de forme et/ou à force par enfichage, serrage, vissage, enclipsage ou fermeture à baïonnette.
  8. Moufle pour four de cuisson selon l'une des revendications 1 à 7, dans lequel le plan de réception pour les supports de produits à cuire (30) se trouve au-dessus du plan de guidage des premiers guides.
  9. Moufle pour four de cuisson selon l'une des revendications 1 à 8, dans lequel le(s) dispositif(s) de retenue (26, 118) et/ou les guides disposés dans le plan le plus bas supportent une plaque horizontale (52) en vitrocéramique, verre, céramique, pierre, métal ou similaire, laquelle plaque recouvre, à l'état rentré des dispositifs de retenue (26, 118) et/ou des guides, un corps chauffant disposé au-dessus de la partie inférieure (6) du moufle pour four de cuisson (2), en particulier un corps chauffant de gril, et sert à la réception d'un produit à cuire et/ou de supports de produits à cuire et/ou d'une autre plaque servant à la réception d'un produit à cuire et/ou de supports de produits à cuire lorsque le logement est réalisé sous forme de cadre.
  10. Moufle pour four de cuisson selon l'une des revendications 1 à 9, dans lequel il est prévu un chariot constitué d'un élément inférieur (70, 78), de parties de retenue (26) et de dispositifs de guidage télescopiques doubles (16) ou de leurs rails (24), dans lequel
    - le chariot peut être sorti du moufle de four (64) ou rentré dans celui-ci, par traction ou poussée au niveau de l'élément inférieur (70, 78) relié de manière immobile aux rails (24), de sorte que les rails (24) se déplacent avec l'élément inférieur (70, 78) et les dispositifs de retenue (26) disposés sur celui-ci par rapport aux rails (18) reliés fixement au support (66), et
    - les rails peuvent être déverrouillés à l'encontre d'un ressort précontraint lors de l'insertion.
  11. Moufle pour four de cuisson selon la revendication 10, dans lequel l'utilisateur peut, avant le fonctionnement à pyrolyse ou à des fins de nettoyage traditionnel du moufle pour four de cuisson (64) et/ou de nettoyage traditionnel et/ou au lave-vaisselle de l'élément inférieur (70, 78) et/ou des dispositifs de retenue (26) et/ou du support (66),
    - enlever les parties de retenue (peignes de retenue) (26) de l'élément inférieur (70, 78) et
    - enlever l'élément inférieur (70, 78), avec ou sans parties de retenue (26), du support (66) et
    - retirer le support, avec ou sans l'élément inférieur (70, 78) et les dispositifs de retenue (26), du moufle pour four de cuisson (64).
  12. Moufle pour four de cuisson selon l'une des revendications 1 à 11, qui comporte plusieurs premiers dispositifs de retenue qui sont disposés dans plusieurs plans et respectivement
    - peuvent recevoir plusieurs supports interchangeables de produits à cuire dans plusieurs plans au niveau de leurs zones arrière tournées vers la paroi arrière de moufle et
    - au moyen de premiers guides qui sont associés à des parois en regard du moufle pour four de cuisson, sont déplaçables sensiblement horizontalement entre une position arrière dans laquelle les supports de produits à cuire se trouvent dans une zone de cuisson, et une position avant dans laquelle les supports de produits à cuire se trouvent dans une zone d'échange, dans lequel
    - les premiers guides sont associés à au moins une zone centrale des parois située entre une zone inférieure et une zone supérieure et
    - les premiers guides sont guidés sur les deuxièmes guides qui sont pour leur part disposés sur les parois du moufle pour four de cuisson et
    - le(s) plan (s) de réception pour les supports de produits à cuire se trou(ven)t dans le plan de guidage des premiers guides et/ou en dessous de celui-ci et/ou au-dessus de celui-ci.
  13. Moufle pour four de cuisson selon la revendication 12, dans lequel plusieurs deuxièmes dispositifs de retenue, respectivement,
    - peuvent recevoir de manière interchangeable plusieurs supports interchangeables de produits à cuire dans plusieurs plans au niveau de leurs zones arrière tournées vers la paroi arrière de moufle en position horizontale et
    - sont déplaçables sensiblement horizontalement, au moyen de troisièmes guides qui sont associés à la partie inférieure du moufle pour four de cuisson, entre une position arrière dans laquelle les supports de produits à cuire se trouvent dans une zone de cuisson et une position avant dans laquelle les supports de produits à cuire se trouvent dans la zone d'échange, dans lequel
    - les troisièmes guides sont guidés sur des quatrièmes guides qui sont pour leur part disposés sur la partie inférieure du moufle pour four de cuisson.
  14. Moufle pour four de cuisson selon la revendication 12 ou 13, dans lequel, en plus des premiers et éventuellement des deuxièmes dispositifs de retenue, plusieurs troisièmes dispositifs de retenue sont également prévus, lesquels, respectivement
    - peuvent recevoir de manière interchangeable plusieurs supports interchangeables de produits à cuire dans plusieurs plans au niveau de leurs zones arrière tournées vers la paroi arrière de moufle en position horizontale et
    - sont déplaçables sensiblement horizontalement, au moyen de cinquièmes guides qui sont associés au plafond du moufle pour four de cuisson, entre une position arrière dans laquelle les supports de produits à cuire se trouvent dans une zone de cuisson et une position avant dans laquelle les supports de produits à cuire se trouvent dans la zone d'échange, dans lequel
    - les cinquièmes guides sont guidés sur des sixièmes guides qui sont pour leur part disposés sur le plafond du moufle pour four de cuisson.
  15. Moufle pour four de cuisson selon l'une des revendications 12 à 14, dans lequel
    - les deuxièmes et/ou quatrièmes et/ou sixièmes guides sont disposés sur un ou plusieurs supports disposés sur le moufle pour four de cuisson, lesquels supports peuvent être disposés de manière fixe ou amovible sur le moufle pour four de cuisson, et
    - lesdits guides sont disposés de manière fixe ou amovible sur le moufle pour four de boulangerie et/ou sur les supports et/ou
    - le ou les supports sont réalisés de préférence de manière parallèle aux parois sous forme d'entretoises qui s'étendent transversalement aux guides, et sous forme de cadre et/ou de grille et/ou de tôles, et
    - le(s) dispositif(s) de retenue peu(ven)t être disposé (s) de manière fixe ou libérable sur les guides de manière au moins partiellement mobile et au moins partiellement immobile, et les dispositifs de retenue et/ou les liaisons et/ou les supports et/ou les guides peuvent porter de préférence un revêtement à base de téflon.
  16. Moufle pour four de cuisson selon l'une des revendications 4 à 15, dans lequel on utilise pour les dispositifs de guidage télescopiques des coulisses et/ou des glissières à éléments roulants telles que des glissières à billes ou à rouleaux.
  17. Moufle pour four de cuisson selon l'une des revendications 1 à 16, qui comprend des dispositifs de retenue, pouvant être disposés de manière variable et déplaçables indépendamment les uns des autres, pour des supports de produits à cuire, lesquels dispositifs de retenue peuvent être modernisés.
  18. Four de cuisson comprenant au moins un moufle pour four de cuisson (2, 64) selon l'une des revendications 1 à 17.
