Abstract

L'invention concerne un procédé et un système pour déposer et préparer des éléments constituant un repas sur une pluralité de plateaux de service (2), ainsi qu'une station de travail (4) utilisée à cet effet, la technique faisant appel à une bande convoyeuse étant remplacée par la technique de l'îlot. A cet effet, l'installation selon l'invention comporte, en particulier, une station de dépôt de portions (1) servant à la préparation en position fixe d'un plateau de service (2) destiné au dépôt manuel de portions d'aliments, ainsi qu'une station de travail (4) affectée à un opérateur, laquelle est placée à côté de la station de dépôt de portions (1) et comporte une pluralité de réservoirs (5) contenant différents aliments à mettre en portions. La station de travail (4) est constituée essentiellement d'un châssis comportant une pluralité de réservoirs (5) destinés à contenir différents aliments. Ces réservoirs (5) sont disposés les uns au-dessus des autres sur au moins deux, de préférence trois étages, et leur hauteur ainsi que leur inclinaison par rapport à l'horizontale peuvent être réglées. De préférence, la station de travail (4) est pourvue d'un dispositif de refroidissement et/ou d'un dispositif générateur de chaleur.
