Claims (11)

  1. Konvektionsofen zum Kochen von Speisen mit:
    - einer Muffel (1) mit einem generell parallelepiped-förmigen, inneren Hohlraum (8), der durch eine untere Bodenwand (2), durch eine obere Deckwand (3) und durch vier Seitenwände (4, 5, 6, 7) begrenzt ist, wobei mindestens eine der Seitenwände (6) mit einer Zugangsöffnung für das Einführen und das Entnehmen von im inneren Hohlraum (8) der Muffel (1) zu kochenden Speisen versehen ist,
    - ein durch einen Motor (10) drehangetriebenes Konvektionsmittel (9), das in dem inneren Hohlraum (8) der Muffel (1) benachbart zur Mitte einer anliegende Seitenwand (7), die nicht mit der Zugangsöffnung versehen ist, angebracht ist, das drehbar um eine Drehachse (11) senkrecht zur benachbarten Seitenwand (7) montiert ist, und zum Zirkulierenlassen von Luft im inneren Hohlraum (8) der Muffel (1) angeordnet ist,
    - Heizmitteln (12, 13, 14), die in der Zirkulation von Luft stromaufwärts oder stromabwärts der Konvektionsmittel (9) angeordnet sind und zum Erwärmen von Luft, die in der Muffel (1) unter Antrieb der Konvektionsmittel (9) zum Kochen der Speisen zirkuliert, ausgebildet sind,
    - ein Kochvolumen (81), das in dem inneren Hohlraum (8) der Muffel (1) zur Aufnahme der zu kochenden Speisen reserviert ist,
    - wobei die Konvektionsmittel eine Konvektions-Zentrifugen-Turbine (9) enthalten, die zum Ansaugen von Luft axial in Richtung zum Zentrum der benachbarten Seitenwand (7) angeordnet ist und um sie in Richtung zu den Rändern der benachbarten Seitenwand (7) radial zu verdrängen,
    dadurch gekennzeichnet, daß :
    - die Konvektionsturbine (9) und die Heizmittel (12, 13, 14) im inneren Hohlraum (8) der Muffel (1) in direkter Kommunikation mit dem Kochvolumen (81) angeordnet sind, ohne eine Trennwand, die die Luftzirkulation leitet und die sich Spritzern von Fett oder anderen Materialien, die von den Speisen während des Kochens stammen, entgegensetzt,
    - ein mechanisches Schutzgitter (22) zwischen der Konvektionsturbine (9) und das Kochvolumen (81) eingepaßt und zwischengesetzt ist, um einen Durchtritt von Fingern eines Benutzers zu unterbinden, ohne die Zirkulation von Luft zur oder von der Konvektionsturbine (9) zu behindern.
  2. Ofen nach Anspruch 1, dadurch gekennzeichnet, daß die Heizmittel elektrische ringförmige Widerstände (12, 13) enthalten, die um den Umfang der Konvektionsturbine (9) angeordnet sind.
  3. Ofen nach Anspruch 1, dadurch gekennzeichnet, daß die Heizmittel einen Gasbrenner (14) aufweisen, der axial im Ansaugbereich der Konvektionsturbine (9) oder radial um den Umfang der Konvektionsturbine (9) angeordnet ist.
  4. Ofen nach irgendeinem der Ansprüche 1 bis 3, dadurch gekennzeichnet, daß die Konvektionsturbine (9) generell eine zylindrische Struktur hat, mit einem hinteren Flansch (25), der eine Vielzahl von kurzen frontalen Schaufeln (26) trägt, die in Umfangsrichtung verteilt sind.
  5. Ofen nach Anspruch 4, dadurch gekennzeichnet, daß der Durchmesser (D) der Konvektionsturbine (9) größer ist als ein Drittel der Größenabmessung der benachbarten Seitenwand (7).
  6. Ofen nach einem der Ansprüche 4 oder 5, dadurch gekennzeichnet, daß die Konvektionsturbine (9) mindestens zwölf Schaufeln (26) aufweist, deren radiale Abmessung kleiner ist als ein Zehntel ihres Durchmessers (D).
  7. Ofen nach irgendeinem der Ansprüche 4 bis 6, dadurch gekennzeichnet, daß die frontalen Schaufeln der Turbine (9) in Bezug auf ihre radiale Richtung (C) geneigt sind.
  8. Ofen nach irgendeinem der Ansprüche 1 bis 7, dadurch gekennzeichnet, daß er einen Stützrahmen für Tabletts aufweist, der durch Ständer gebildet ist, die durch obere Traversen befestigt sind, um eine offene parallelepiped-förmige Struktur zu bilden, die eine freie Zirkulation von Luft zuläßt und seitliche Gleitbahnen trägt, die rechtwinklig zur vorderen Seitenwand (6) stehen, zur gleitenden Aufnahme und zum Stützen von seitlichen Rändern von horizontalen Tabletts, auf denen die zu kochenden Speisen angeordnet sein können.
  9. Ofen nach irgendeinem der Ansprüche 1 bis 8, dadurch gekennzeichnet, daß er eine Reinigungseinrichtung (27) aufweist zum Sprühen von Wasser in die Muffel (1).
  10. Ofen nach Anspruch 9, dadurch gekennzeichnet, daß die Reinigungseinrichtung (27) eine horizontale Schale enthält, die in der Nähe der oberen Deckwand (3) angeordnet ist und zentrale Mittel zur Zufuhr von Wasser zum Erzeugen einer Strömung von Wasser in Richtung zum Umfang der Schale parallel zur oberen Deckwand (3).
  11. Verwendung eines Ofens nach Anspruch 7, dadurch gekennzeichnet, daß der Motor (10) zum Drehantreiben der Turbine (9) in der Richtung wo die Ausrichtung der Schaufeln die Luft in Richtung zur Achse der Turbine treibt, was einen reduzierten zentrifugalen Antrieb auf die Luft bewirkt.
