Definitions
- the present invention relates to ovens for cooking food, and more particularly to forced convection gas ovens used in community kitchens.
- EP 0 733 862 A also discloses a gas oven according to the preamble of claim 1.
- Forced convection gas furnaces for cooking food generally comprise a metal muffle surrounding an inner muffle cavity, with a bottom wall forming a floor, an upper wall forming a ceiling, and four vertical peripheral walls. At least one of the peripheral walls is provided with an access door for the introduction and extraction of food to be cooked in the interior cavity of the muffle.
- the convection of air is provided by a convection turbine, urged in rotation by a motor, and disposed generally in the vicinity of the furnace. one of the peripheral walls which has no access door.
- the turbine is rotatably mounted on an axis of rotation perpendicular to the peripheral wall.
- Gas burners are placed in the air flow, upstream or downstream of the turbine, and are adapted to heat the air circulating in the muffle under the impulse of the turbine, promoting the cooking of food.
- the inner cavity of the muffle is divided into two compartments: a cooking compartment, accessible by the door, and shaped to receive the food to be cooked; a heating compartment, including the convection turbine and the gas burners.
- the cooking compartment is always isolated from the heating compartment by a partition wall, generally perpendicular to the axis of rotation of the turbine.
- the partition wall has a double effect of channeling the air circuit powered by the turbine, and protection of the heating compartment relative to projections of grease or other material from food during cooking. Indeed, in known ovens, a constant concern is to prevent the projections from food during cooking just soil the elements that are inside the heating compartment, namely the turbine, the gas burners and the various sensors for controlling these elements.
- Another problem with cooking gas ovens for food is the difficulty of regularly cooking all the foods in the oven regardless of their position in the cooking compartment. It can be seen that the cooking of food can be very different depending on the position of the food in the cooking compartment. Some areas of the cooking compartment may overheat food, while other areas produce insufficient heat. Also, the cooking distribution is modified according to the type of food to be cooked, and according to the quantities of food introduced into the cooking compartment. This results in uneven cooking, and reduced yield.
- the present invention is intended in particular to avoid the disadvantages of known forced convection gas oven structures for cooking food, aiming to ensure a better baking distribution and better performance.
- the invention results from the surprising observation that a particular arrangement of the gas burner provides a better baking distribution and better performance.
- the turbine may advantageously be a generally cylindrical structure, with a posterior flange carrying a plurality of short frontal blades distributed at the periphery.
- the diameter of the turbine may advantageously be greater than one third of the largest dimension of the adjacent peripheral wall.
- the gas burner is in the general shape of a circular ring, with a substantially horizontal axis perpendicular to said adjacent peripheral wall.
- the gas burner comprises a rear heating plate, pierced with gas passage holes distributed over its surface, and closing an annular cavity of a burner body.
- the central passage of the gas burner can advantageously be traversed by a flue gas discharge pipe, through which the flue gases escape axially away from the adjacent peripheral wall and then are guided towards the upper part of the furnace.
- a convection oven comprises a muffle 1, having an inner cavity 8 generally parallelepiped limited by a lower floor wall 2, an upper ceiling wall 3, by two walls opposed lateral peripherals 4 and 5, by an anterior peripheral wall 6 and a posterior peripheral wall 7.
- the anterior peripheral wall 6 is provided with an access door for the introduction and extraction of food to be cooked in the inner cavity 8 of the muffle.
- the inner faces of the walls of the muffle are generally smooth, to avoid catching and retaining food particles likely to detach from food to cook.
- a convection turbine 9 is urged in rotation by a motor 10 powered by an external source of electrical energy.
- the convection turbine 9 is of the centrifugal action type, drawing the air axially through its center and displacing the air radially by its periphery. It includes for that inclined blades, known and usual manner.
- the convection turbine 9 is disposed near the center of a peripheral wall without an access door. In the realization illustrated, the convection turbine 9 is disposed near the center of the rear peripheral wall 7 of the muffle.
- an oven with two doors in opposition to each other formed respectively in the anterior peripheral wall 6 and in the posterior peripheral wall 7, with the turbine placed in the vicinity of one of the opposite side peripheral walls 4 or 5 of the oven.
- the convection turbine 9 is rotatably mounted on an axis of rotation 11 perpendicular to the rear peripheral wall 7 to which it is adjacent.
- the convection turbine 9 sucks the air axially towards the center of the posterior peripheral wall 7 and delivers the air radially towards the edges of the posterior peripheral wall 7.
- the heating means comprise a gas burner 14 placed axially in the suction of the convection turbine 9, and adapted to heat the air circulating in the muffle under the impulse of the convection turbine.
- the gas burner 14 is directed to the rear wall 7 of the furnace, that is to say, it directs the flame it produces to the rear wall 7 of the furnace.
- the gas burner 14 is directed towards the center of the turbine 9, that is to say that it directs the flame it produces towards the center of the turbine 9. It is fed by a supply pipe 16 Its central part is crossed by a flue gas evacuation pipe 17.
- FIGS 4 and 5 illustrate a preferred embodiment of the gas burner 14 according to the invention.
- the gas burner 14 is in the general shape of a circular ring, comprising a rear heating plate 30, pierced with gas passage holes, such as the hole 31, distributed on its surface.
- gas passage holes such as the hole 31, distributed on its surface.
- the rear heating plate 30 closes an annular cavity 32 of a burner body 33 bounded by a hemispherical peripheral wall 34 and a coaxial central tubular wall 35.
- the tubular central wall 35 defines a central through passage 36, which itself is traversed by the exhaust gas duct 17 not shown in Figures 4 and 5 but already reported in relation to Figures 1 to 3.
- the rear heating plate 30 comprises at least one ignition electrode 37 and a flame control electrode 38.
- the annular cavity 32 of the burner body 33 communicates with the supply pipe 16, partially shown in FIGS. 4 and 5.
- the electrodes 37 and 38 are advantageously connected to a control device, not shown, by respective connection lines 39 and 40 disposed inside the supply line 16.
- the gas burner 14 in the shape of a circular ring is oriented with its substantially horizontal axis perpendicular to the adjacent peripheral wall 7 or bottom wall of the furnace.
- the flue gas discharge pipe 17 thus comprises a first coaxial section, passing through the central passage 36 of the gas burner 14, so that the flue gas escapes axially away from the adjacent peripheral wall 7 and is then guided to the top of the furnace in the flue gas discharge pipe 17.
- a cooking volume 81 is reserved in the interior cavity 8 of the muffle for receiving food to be cooked, and there is provided a simple removable tray support frame, adapted to penetrate the muffle by the door provided in the anterior peripheral wall 6.
- the tray support frame consists of uprights connected by upper cross members to form a generally parallelepiped openwork structure leaving a free flow of air in the oven.
- the tray support frame structure carries side rails, for example in the form of U-shaped profiles, perpendicular to the front peripheral wall 6, and shaped to slidably receive and support the lateral edges of horizontal trays on which can be arranged food to be cooked.
- the convection turbine 9 and the gas burner 14 are placed in the muffle 1 in direct communication with the cooking volume 81, without partition wall opposing the flow of air. Only a mechanical protection grid 22, shaped and interposed between the cooking volume 81 and the assembly formed by the convection turbine 9 and the gas burner 14, is provided to prevent the mechanical contact of a user's hand with the blades of the turbine in rotation or with the gas burner 14. Thus, the mechanical protection grid 22 is placed upstream of the gas burner 14.
- the mechanical protection grid 22 is of closed cylindrical shape and enveloping, with a part 23 cylindrical device and a front portion 24 planar.
- the mechanical protection grid 22 is sufficiently wide mesh not to disturb the flow of air to or from the convection turbine 9, and mesh sufficiently tight to prevent their passage through the fingers of a user and to promote the distribution convection air flow around the gas burner 14.
- the front portion 24 of the mechanical protection grid 22 carries, in its central zone, a filter 29 or grid finer mesh, further promoting a regular flow of convection air around the burner. gas 14 for a stabilization of the flame.
- a convection turbine 9 with a generally cylindrical structure, with a disc-shaped rear flange 25 carrying a plurality of short, peripherally distributed short-edge blades 26.
- the diameter D of the convection turbine 9 is preferably greater than one third of the largest dimension (width or height) of the adjacent posterior peripheral wall 7.
- the convection turbine 9 comprises at least twelve front blades 26 having a radial dimension less than one-tenth of its diameter D.
- a cleaning device 27 by spraying water in the muffle 1.
- the cleaning device 27 may comprise a horizontal cup placed adjacent to the center of the upper ceiling wall 3, with central water supply means for producing a flow of water towards the periphery of the cup parallel to the upper wall of the dish. ceiling 3.
- the water is projected radially around the periphery of the cup, preferably when the oven is still relatively hot, and the water then flows on all the peripheral walls of the oven and on the convection turbine 9 and the heating means.
- the means according to the invention allow a correct cooking operation not only in simple convection of hot gases, but also in mixed cooking in the presence of steam.
- a blown air production device 16a (FIG. 3) is connected upstream in the supply circuit 16 of the gas burner 14, to supply the gas burner 14 with supply air.
- a blown air production device 16a (FIG. 3) is connected upstream in the supply circuit 16 of the gas burner 14, to supply the gas burner 14 with supply air.
