Abstract
Настоящее изобретение относится к пищевому жировому компоненту, способному предотвращать окисление жирных кислот и одновременно улучшать как питательный профиль, так и органолептические свойства продукта. Также настоящее изобретение относится к способу, подходящему для получения такого продукта, а также к продуктам, в которых используется указанный компонент. В настоящем изобретении предотвращение окисления жирных кислот основано на физическом барьере и на антиокислителях, факультативно содержащихся в ингредиентах. Такая разновидность пищевого жирового компонента подходит для различных применений. В числе прочего, его можно применять в котлетах из мясного фарша, шоколадных массах и пирожках, кроме того, он также подходит для фармацевтической и косметической промышленности для улучшения композиций продуктов.
