Abstract
Изобретение относится к способу изготовления твердого биопродукта, в котором по меньшей мере 80% исходного содержания трудноперевариваемых олигосахаридов (раффиноза, стахиоза и вербаскоза) было расщеплено до перевариваемых моно- и дисахаридов, включающему следующие шаги: 1) предоставление смеси перемолотой, хлопьевидной или каким-либо другим образом измельченной биомассы, содержащей олигосахариды и, факультативно, полисахариды, и дополнительно содержащей белковые части растений, воду и один или более ферментативных препаратов, содержащих α-галактозидазу(ы); 2) проведение реакции в смеси, полученной в шаге (1), при условиях постоянного перемешивания и при условиях, когда содержание воды в исходной смеси не превышает 65 вес.%, в течение 0,15-36 ч при температуре примерно 20-65°С; 3) инкубирование прореагировавшей смеси из шага (2) при температуре и в течение периода времени, которые инактивируют указанную α-галактозидазу(ы), а также и биопродукты, получаемые этим способом. Изобретение также относится к применению биопродукта и к пищевому, кормовому, косметическому или фармацевтическому продукту или к пищевой добавке, содержащим твердый биопродукт.
