Abstract
Αποκαλύπτεται μία μέθοδος επεξεργασίας σπόρων κακάου ή αποφλοιωμένων αμυγδάλων κακάου, που περιλαμβάνει τα βήματα: (a) προσθήκης νερού στους σπόρους κακάου ή στα αποφλοιωμένα αμύγδαλα κακάου για να δημιουργηθεί ένα εναιώρημα· (b) υγρής άλεσης του εν λόγω εναιωρήματος· (c) υποβολής του εν λόγω εναιωρήματος σε μία θερμική επεξεργασία σε μία θερμοκρασία 70°C ή μικρότερη· (d) διαχωρισμού του εναιωρήματος σε: μία υδατική φάση (βαριά φάση), μία λιπαρή φάση (ελαφριά φάση) που περιλαμβάνει βούτυρο κακάου, και μία στερεά φάση που περιλαμβάνει σκόνη κακάου και ρευστά συστατικά· και (e) συνεχώς διαχωρισμού των ρευστών συστατικών από τη στερεά φάση που λήφθηκε στο βήμα (d) για να ληφθεί άρωμα κακάου και σκόνη κακάου με παροχή μίας ροής της εν λόγω στερεάς φάσης σε μία συσκευή ανάμιξης- όπου η συσκευή ανάμιξης περιλαμβάνει: ένα κυλινδρικό, σωληνοειδές σώμα με έναν οριζόντιο άξονα που έχει ένα άνοιγμα εισόδου για τη στερεά φάση, ένα άνοιγμα εξόδου για την ξηραμένη στερεά φάση και ένα προαιρετικό άνοιγμα εξόδου για μία φάση ατμού που περιλαμβάνει άρωμα κακάου· ακραίες πλάκες που κλείνουν το σωληνοειδές σώμα στα αντίθετα άκρα του· ένα ομοαξονικό περίβλημα θέρμανσης ή ψύξης του εσωτερικού τοιχώματος του σωληνοειδούς σώματος σε μία θερμοκρασία από 55°C έως 150°C· και έναν πτερυγιοφόρο ρότορα, ο οποίος υποστηρίζεται για περιστροφή στο σωληνοειδές σώμα, με τα πτερύγια του να διατάσσονται ως μία έλικα και να προσανατολίζονται για τη φυγοκέντρηση της στερεάς φάσης και την ταυτόχρονη μεταφορά της προς το άνοιγμα εξόδου.
