Abstract

trata-se de um método para processar grãos ou polpa de cacau que compreende as etapas de: (a) adicionar água a grãos ou polpa de cacau para formar uma suspensão; (b) realizar moagem a úmido da dita suspensão; (c) submeter a dita suspensão a um tratamento a quente a uma temperatura de 70 °c ou menos; (d) separar a suspensão em: uma fase aquosa (fase pesada), uma fase gordurosa (fase leve) que compreende manteiga de cacau e uma fase sólida que compreende pó de cacau e componentes fluidos; (e) separar continuamente os componentes fluidos da fase sólida obtida na (d) para obter aroma de cacau e pó de cacau através do fornecimento de um fluxo da dita fase sólida a um dispositivo misturador; em que o dispositivo misturador compreende: um corpo cilíndrico e tubular com um eixo horizontal que tem uma abertura de entrada para a fase sólida, uma abertura de saída para a fase seca sólida e uma abertura de saída opcional para uma fase de vapor que compreende aroma de cacau; placas de extremidade que fecham o corpo tubular em suas extremidades opostas; um revestimento coaxial que aquece ou resfria a parede interna do corpo tubular a uma temperatura de 55 °c a 150 °c; e um rotor com pás, que é sustentado para rotação no corpo tubular, sendo que suas pás são dispostas como uma hélice e são orientadas para centrifugar a fase sólida e simultaneamente transportá-la em direção à abertura de saída.
