Abstract

Η εφεύρεση είναι συναφής με εκχυλίσματα κακάο τα οποία λαμβάνονται με μία μέθοδο επεξεργασίας σπόρων κακάο ή αμυγδάλου κακάο η οποία περιλαμβάνει τα στάδια: (α) προσθήκη νερού σε σπόρους κακάο ή σε αμύγδαλα κακάο προκειμένου να σχηματιστεί ένα αιώρημα• (β) υγρή άλεση του εν λόγω αιωρήματος• (γ) υποβολή του εν λόγω αιωρήματος σε θερμική επεξεργασία σε θερμοκρασία 70°C ή μικρότερη• (δ) διαχωρισμός του αιωρήματος σε: μια υδατική φάση (βαριά φάση), μια λιπαρή φάση (ελαφρά φάση) η οποία περιλαμβάνει το βούτυρο κακάο, και μια στερεά φάση η οποία περιλαμβάνει σκόνη κακάο και υγρά συστατικά• (ε) συνεχής διαχωρισμός των υγρών συστατικών από τη στερεά φάση η οποία λαμβάνεται στο στάδιο (δ) προκειμένου να ληφθεί άρωμα κακάο και σκόνη κακάο τροφοδοτώντας μια ροή της εν λόγω στερεάς φάσης σε μια συσκευή ανάμιξης όπου η συσκευή ανάμιξης περιλαμβάνει: ένα κυλινδρικό σωληνοειδές σώμα με οριζόντιο άξονα το οποίο έχει άνοιγμα εισόδου για τη στερεά φάση, ένα άνοιγμα εξόδου για την ξηρή στερεή φάση και προαιρετικά ένα άνοιγμα εξόδου για μια φάση ατμού η οποία περιλαμβάνει άρωμα κακάο• ακραίες πλάκες κλείνουν το σωληνοειδές σώμα στα αντίθετα άκρα του• ένα ομοαξονικό περίβλημα το οποίο θερμαίνει ή ψύχει το εσωτερικό τοίχωμα του σωληνοειδούς σώματος σε θερμοκρασία από 55° C έως 150° C• και ένας ρότορας με λεπίδες, ο οποίος στηρίζεται για περιστροφή στο σωληνοειδές σώμα, του οποίου οι λεπίδες είναι διευθετημένες ως έλικας και είναι προσανατολισμένες για φυγοκέντρηση της στερεάς φάσης και ταυτόχρονα τη μεταφορά της προς το άνοιγμα εξόδου. Περαιτέρω δημοσιοποιούνται σοκολάτα και προϊόντα ομοειδή της σοκολάτας με τη χρήση των εν λόγω εκχυλισμάτων.
