Abstract
Consiste en un tratamiento termal seguido por un sometimiento del krill tratado a aceleración y una desaceleración repentina (frenaje) a fin de causar la destrucción del cuerpo del krill y extraer la carne de la sección abdominal siendo separada la parte comestible de la no comestible mediante el uso de un método hidro-dinámico o gas-hidrodinámico.
