Abstract
se refiere a un procedimiento de preparación de jugo de noni que comprende etapas de: a) triturado de los frutos de noni cuando están en estado de madurez blanco translúcido para producir un puré de frutos de noni; b) tratamiento enzimático de dicho puré de frutos de noni con una preparación enzimática que presenta al menos una actividad pectinasa y al menos una actividad celulasa a un contenido comprendido entre 50 a 200 ml o g/tonelada de puré de frutos de noni a una temperatura comprendida entre 20 y 55°C durante al menos 30 minutos; c) eliminación de la pulpa y de las semillas presentes en los frutos de noni por prensado de dicho puré que conduce a un primer jugo; d) tamizado o filtración grueso de dicho primer jugo obtenido al final de la etapa c) que conduce a un segundo jugo.
