本发明涉及食品加工的技术领域,其特点是将果仁作为制做香肠的重要原料。
经检索没有在公开的文献中发现此类配方。
背景技术:
目前,随着人们生活水平的改善,对香肠的口味要求亦越来越高,本发明推出的配方,改变了香肠品种品质及口味,迎合了广大人群新口味、新口感的需要。本配方同时能按不同口味的人群,分别配制成不同味道的果仁香肠,如腰果香肠、松子香肠、开心果仁香肠、香榧仁香肠、核桃仁香肠、茨实仁香肠、杏仁香肠等等果仁香肠。
本发明果仁香肠配方为:
其中物质的组份(为重量百分比)
猪瘦肉50-80%      猪肥肉10-30%      白  糖2-4%
精  盐2-4%        60°白酒1-3%      酱  油0.5-4%
淀  粉1-4%        十三香粉0.5-4%    味  精0.5-4%
果  仁0.1-99.9%   辣椒粉0-4%        麻辣粉0-3%
本发明的优点在于:由发明配方生产的果仁香辣甜香肠,即有香肠的特征,又有各种果仁的风味,提高了香肠的营养成份。

  1. 果仁香辣甜香肠的特征是原料中以果仁为重要成份来制做香肠。即:辣味果仁香肠、五香味果仁香肠、多味果仁香肠、麻辣味果仁香肠、甜味果仁香肠。
    果仁香肠配方为(为重量百分比):
    猪瘦肉   50-80%       猪 肥 肉  10-30%      白  糖  2-4%
    精  盐   2-4%         60°白酒  1-3%        酱  油  0.5-4%
    淀  粉   1-4%         十三香粉  0.5-4%      味  精  0.5-4%
    果  仁   0.1-99.9%    辣 椒 粉  0-4%        麻辣粉  0-3%
