Abstract
本发明提供了含有丰富的易吸收状态的海藻矿物质和食物纤维的深受喜爱的醋海藻粉或颗粒及其制造方法。
Description
技术领域
本发明涉及新型醋海藻加工食品,更详细的说,涉及把海带等海藻用食醋处理,使海藻中的难消化性多糖类变化为消化性能优异的低分子多糖类的、含丰富有机酸矿物质盐的醋海藻粉末及其制造方法。
背景技术
很早以来,海藻就以,例如,海带原汤、山药汁海带、醋泡野菜与海藻、醋泡海蕴、带味海带、用调味品煮的海藻小菜、醋制海带、海藻色拉、炖制食品等形式被广泛提供食用。还有,从海藻中提取的琼脂、褐藻酸钠、角叉藻胶等已经被广泛的用于医药、食品、化妆品等领域。
另一方面,海藻中含有丰富的碘、铁分、钙、镁、钾、磷、锌、铜等矿物质和水溶性食物纤维,对高血压和动脉硬化、大肠癌和由肠引起的老化现象的预防、排解便秘、降低血糖值、补钙、因矿物质不足造成的免疫力低下和因钾不足导致的肝硬变和心肌梗塞的预防等都有效,特别是近年来,饮食生活是癌、心脏病、脑溢血、糖尿病、高血压、肾病等生活习惯病的重要原因,对此,海藻的摄取正在被重新认识。
作为以摄取海藻为目的的健康食品,海藻粉和颗粒、含有海藻的片锭剂和胶囊等已经在市场上出售。但是,这些食品的口味很差,难受欢迎。而且,由于海藻中的多糖类难以消化,海藻中的重要矿物质是以不溶性的形式与海藻成分相结合的,因此,即使海藻是以粉末和颗粒的形态供给食用,仍存在有其作为营养成分的矿物质与糖分难被消化吸收,和不能充分发挥钙、镁、铁分、钾、钠、锌等矿物质作为食品的重要味觉、浓郁味道的效果的问题。
发明的公开
本发明人等,为了使含有丰富的水溶性食物纤维和矿物质的海藻变成可以作为日常食用的健康食品等而被广泛、一般地应用,成功的制造出了醋海藻粉和颗粒,从而完成了本发明。
因此,根据本发明,提供了醋海藻粉或颗粒,其特征是含有其各粉末粒子至少部分被食醋成分所覆盖的海藻粉末或在食醋中浸渍处理过的海藻粉末。
在一个优选的实施方案中,本发明涉及一种醋海藻粉末的制造方法,其特征在于,将海藻粉末化,将粉末化的海藻用食醋进行浸渍处理,将浸透食醋成分的海藻粉末和溶解了海藻成分的食醋进行干燥粉末化。本发明还涉及由该方法制造的醋海藻粉末。
下面,更详细说明由本发明所提供的醋海藻粉或颗粒及其制造方法。
本发明的醋海藻颗粒例如可以通过下述方法制造,在海藻粉末中配合适宜的可食用性赋形剂和其它添加物,用气流干燥造粒机来造粒时,一边将含有适宜结合剂的食醋喷雾,一边造粒。
作为原料使用的海藻粉末,最合适的是海带粉末,不过,并不限于此,裙带菜、羊栖菜(ヒジキ)、麒麟菜(キリンサイ)等褐藻类、红藻类、绿藻类各种海藻的粉末也同样可以使用。这些海藻的粉末化可以是,把充分干燥了的海藻在其已有的粉末化装置,例如,铣削机(カッタ-ミル)、辊式破碎机、粉碎机、盘磨机、离心分级型磨机、喷射粉碎机等粉碎机中进行,也可根据需要将上述装置组合起来使用。对于此时的粉末化程度并没有严格的限制,可以随最终制品的形态而改变,不过,一般为20~200目,以在50~150目范围内为优选。
这样得到的海藻粉末按原样去进行造粒处理也可以,不过,通常优选的是配合了可食性赋形剂或其它添加物后做造粒处理。
作为上述可食性赋形剂,列举的有,例如,明胶、阿拉伯树胶、西黄蓍胶、淀粉、糊精、环糊精、葡萄糖、果糖、乳糖、蔗糖、淀粉分解物、脱脂奶粉、全乳、大豆蛋白质、甲基纤维素、羧甲基纤维素等。又,作为其它添加物,列举的有,例如,胡萝卜素、维生素B、维生素C等维生素类;醋酸钙、碳酸钙、磷酸钙、乳酸钙、碳酸镁、磷酸钠、柠檬酸钠、柠檬酸钾、Zn、Mo、Fe、Cu、Se、I等元素的可食性盐类等矿物质类;砂糖、食盐、酵母等调味料等。可以根据需要,这些赋形剂和其它添加剂可根据需要只使用一种或组合2种以上使用。
这些赋形剂和/或其它添加剂相对于海藻粉末的配合比例并没有任何特别的限制,可以自由设定,不过,通常,相对于每100重量份海藻粉末,赋形剂和其它添加剂的合计量为0.1~1000重量份,特别优选使用20~500重量份。
上述海藻粉末在与适宜的上述赋形剂和/或其它添加物紧密混合之后,装入气流干燥造粒机,一边将含有适宜结合剂的食醋喷雾一边造粒。
作为喷雾的食醋,可以使用,例如,米醋、谷物醋(黑醋等)、果实醋、合成醋、醋酸水溶液等任意可食性醋,不过,一般以含有丰富的各种有机酸的酿造醋为优选。
还有,作为适宜使用的结合剂,列举的有,例如,褐藻酸、岩藻多糖、角石花菜、富诺林胶(フノリ)、麒麟菜、阿拉伯树胶、西黄蓍胶、明胶、大豆蛋白质、淀粉、糊精、环糊精、羧甲基纤维素等。这些结合剂在使用时,通常其比例是每1L食醋用100g以下,优选的比例为每1L食醋用5~50g。
相对于海藻粉末或海藻粉末与赋形剂和其它添加物的配合物,食醋的喷雾量随造粒机的操作条件而异,一般是,相对于每100重量份海藻粉末为10~200重量份,特别以在30~100重量份范围内为优选。还有,喷雾食醋的吸气温度为约70~约120℃,特别以在约75~约100℃范围内的温度为优选。
采用气流干燥造粒机时,除了使用上述含有适宜的结合剂的食醋作为喷雾液之外,其操作可以与通常进行的操作方法一样地来进行。
这样就可以得到含有各粉末粒子至少部分被食醋成分所覆盖的海藻粉末的醋海藻颗粒。
又,本发明的醋海藻粉末,例如,可以把配合了适宜可食性赋形剂与其它添加物而成的海藻粉末在食醋中浸渍处理之后经干燥粉末化来制造。
具体说,例如,在如前述那样调制的海藻粉末或海藻粉末与赋形剂和其它添加物的配合物中,加入前述食醋,混合,放置例如10分钟~24小时左右,使得食醋充分渗入海藻粉末中。对于加入的食醋的量,并没有严格的限制,可以随所使用的食醋的种类而变动,不过,一般是相对于每100重量份海藻粉末为50~2000重量份,以在100~1000重量份范围内为优选。再是,在浸渍处理中,也可以使用与前述同样地含有适宜结合剂的食醋。
接着把浸渍处理过的海藻粉末或海藻粉末与赋形剂和其它添加物的配合物进行干燥粉末化。此干燥粉末化可以用其本身已经知道的方法,例如,干燥喷雾、冷冻干燥等方法来进行。
干燥喷雾在适度残存食醋成分的条件下,例如,在送风温度约170~约220℃、特别是约180~约220℃、和排气温度约110~约150℃、特别是约110~约130℃的条件下实施为好。
再者,在喷雾干燥中,当海藻粉末或海藻粉末与赋形剂和其它添加物的配合物的食醋浸渍处理物的粘度过高而不适合于喷雾时,可以加水来调整成适合于喷雾的粘度。
由此,就可以得到在各粉末粒子中含有食醋成分的醋海藻粉。
由如上所述制造的本发明的醋海藻粉或颗粒具有如下种种优点:1)海藻矿物质与食醋(酿造醋)中的各种有机酸形成了水溶性盐,含有丰富的为粘膜、消化道容易吸收的有机酸矿物质盐;2)含有来自于食醋(酿造醋)的各种糖、氨基酸、肽等,由于这些成分与海藻矿物质共存,使得口味、风味有了明显改善,其味道极其优美;3)海藻中原来含有的难消化、难溶解的多糖类被分解成容易消化吸收的低分子多糖类,含有大量的水溶性易吸收食物纤维,等等。
这样,本发明的醋海藻粉或颗粒可以就这样直接供食用,但是,也可以把它压缩成型为片锭剂、填充在胶囊中来作为健康食品来供应,进而,例如还可以与碎紫菜、芝麻、松鱼末、盐、香辣料等混合来调制食物等,可广泛应用于加工食品。
下面用实施例来更具体说明本发明,不过,本发明并不仅限于这些实施例。
实施例
实施例1
在海带末40kg、糊精30kg、麦芽糖20kg、食盐3kg、麒麟菜水性抽提物0.5kg、淀粉5kg和维生素C1.5kg的混合物100kg中加入400L米醋并混和,放置1夜后,进一步加入500L水,在送风温度190℃、排气温度130℃下进行喷雾干燥,得到了129kg的醋海带粉。
实施例2
把海带粉100kg和米醋300L混合,放置1夜,加入100L水以提高流动性,在送风温度180℃、排气温度120℃下进行喷雾干燥,得到了122kg醋海带粉末。
实施例3
将裙带菜粉末50kg、糊精50kg、苹果醋100L和米醋200L混合,在60℃下放置5小时之后,加水800L,在送风温度180℃、排气温度130℃下进行喷雾干燥,得到了118kg醋裙带菜粉末。
实施例4
裙带菜粉末 30kg
糊精 20kg
环糊精 20kg
砂糖 20kg
食盐 4kg
维生素C 2kg
褐藻酸 1kg
麒麟菜 1kg
在上述混合物中加入苹果醋100L和米醋200L,混合并放置1夜后,加水1000L稀释,在送风温度190℃、排气温度120℃下进行喷雾干燥,得到了122kg醋裙带菜粉末。
实施例5
在裙带菜粉末50g和淀粉50g中加入含5%醋酸的米醋200mL并混合,放置5小时后,冷冻干燥,得到112g醋裙带菜粉末。
实施例6

食盐 4kg

在上述混合物中取96kg装入气流干燥造粒机中,其次,另外地把余下的上述混合物(约10kg)加到溶解含有褐藻酸0.5kg和麒麟菜0.5kg的米醋40L中,混合、溶解得到米醋溶液,将该米醋溶液在80℃的热风下进行喷雾,造粒,得到了醋海藻颗粒98kg。
实施例7

食盐 4kg
维生素C 3kg

在上述混合物中取90kg装入气流干燥造粒机中,其次,另外地把余下的上述混合物(约10kg)加到溶解含有褐藻酸0.3kg和麒麟菜0.3kg的黑醋40L中,混合、溶解得到黑醋溶液,将该黑醋溶液在80℃的热风下进行喷雾,造粒,得到了醋海带颗粒95kg。
Claims (5)
1.一种醋海藻粉末的制造方法,其特征在于,将海藻粉末化,将粉末化的海藻用食醋进行浸渍处理,将浸透食醋成分的海藻粉末和溶解了海藻成分的食醋进行干燥粉末化。
2.权利要求1所述的方法,其特征在于,使用平均每100重量份海藻粉末为50~2000重量份的食醋来进行浸渍处理。
3.权利要求1所述的方法,其特征在于,采用喷雾干燥或冷冻干燥来进行干燥粉末化。
4.权利要求3所述的方法,其特征在于,在送风温度170~220℃和排气温度110~150℃的条件下进行喷雾干燥。
5.根据权利要求1所述的醋海藻粉末的制造方法制造的醋海藻粉末。
