Abstract
利用裙带菜和海带的凝胶形式的保健食品及其制备方法。本发明涉及以裙带菜和海带为主原料而制备成凝胶形式的食品,其特征在于,混合裙带菜或海带,或者混合裙带菜和海带而在精细湿式制粉的主材料混合温和香茶、粉末乳酸菌及低分子鱼胶原蛋白,混合一种以上能够提高粘性的物质,并混合天然色素混合制剂及增稠剂混合制剂之后,通过煮沸并冷却,而加工为凝胶形式之后装入袋中,方便制备为有益于健康的食物,容易食用。
Description
技术领域
本发明涉及一种将裙带菜和海带作为主原料而制备凝胶(gel;与羊羹或胶状物、凉粉等一样柔软且具有弹性的固体形式)形式的食品,便于制备有益健康的食物,并容易食用。
背景技术
一般而言,裙带菜和海带在海草类中是人们熟悉并能够容易地以低廉的价格获取的食物,人们在食用时具有很多有效的功效。
更具体地,裙带菜为韩国人最喜爱的食材之一,作为超级食品而备受认可,生日时煮汤食用,产妇在产后调理时也会食用,是人们非常熟悉的食品。称为海中的蔬菜的裙带菜富含钙而强壮骨骼,作为低热量、低脂肪食品而对减肥的人也非常好,通过促进肠道健康而增强免疫力。
将裙带菜(海带)含有的营养素和功效按人体的部位及健康功能进一步了解。
*骨骼健康
骨质疏松症是在骨骼上小孔增多而变脆弱的状态下,因骨骼钙量大幅减少而引起的疾病,随着年龄的增长,骨密度降低而产生,因此是老年阶层需要注意的疾病,在裙带菜中富含形成骨骼并帮助各种酶作用的镁和维持味觉的锌而保持骨骼健康。
*肠道健康
在裙带菜中富含坚固肠黏膜的维生素A,含有丰富的膳食纤维而帮助肠运动,在裙带菜中,富含必需的矿物质,其中,钾丰富而调节细胞内的水分含量和渗透压,并起到促进钠的排出的作用。
*减肥
在裙带菜富含膳食纤维而有助于排出肠内积攒的代谢物,这也有助于减肥,在裙带菜中称为褐藻酸的滑溜的性质的纤维具有排出体内积累的代谢物和毒素而有效减少体重的效果。
*预防血管疾病
·报告显示裙带菜和海带内含有的碱性氨基酸即层黏连蛋白具有降低血压的作用,血液循环在人体维持生命时进行最基本的活动,因而,是非常重要的,血液循环障碍引起高血压、动脉硬化等特定疾病,因为我们的身体不能正常发挥功能,所以非常危险。裙带菜具有抗氧化效果并预防心脏病、高血压、动脉硬化症。
*预防贫血
据悉对于减肥或因繁忙而不吃饭的人或因各种理由而出现贫血症状时,裙带菜富含预防贫血的铁和钙等,通过裙带汤也能够恢复元气,而且对需要补充铁和叶酸的人也有益处。
*皮肤健康
在裙带菜和海带含有大量皮肤必需成分,提供让皮肤变得富有弹性且柔嫩并益于皮肤的大量营养素,各种维生素和蛋白质丰富,可以去除体内活性氧而防止衰老。
*抗氧化效果
裙带菜含有膳食纤维和褐藻酸、岩藻黄素、褐藻素等,也含有叶绿素和倍塔胡萝卜素等抗氧化成分。而且去除体内活性氧而延缓细胞损伤的抗氧化剂丰富,因此,抗衰老效果卓越,也有助于预防癌症。
海带也具有与裙带菜相似的成分和功效,尤其,据悉具有动脉硬化、高血压的预防效果和降低胆固醇的功效,低热量、低脂肪且膳食纤维素丰富而预防便秘而给予饱腹感,从而,减少饭量,由此为有效减肥的食品。
如上所示,虽然裙带菜和海带对人体具有非常多样且优秀的效果,人体吸收的形式除了在裙带菜汤或生裙带菜拌菜等吃饭时以增加小菜形式食用的形式之外,不存在另外的方法,因而摄食量不多,其它一些不同种类的包含裙带菜的食品的情况,口味或口感都不太好,摄食方法不方便,不便于携带,且难以保管而降低喜好度,其为现实。

发明内容
发明要解决的技术问题
基于上述问题而提出的本发明的目的在于提供一种通过简单的方法将对人非常有效的食品材料即裙带菜和海带制备为凝胶形式的食品,而便于食用且味道很好,也提高便携性和保管性而对很多的人来说能够极大增加摄食量的制备方法和通过该方法制备的食品。
用于解决问题的技术方案
为了实现所述目的的本发明首先作为主材料混合裙带菜或海带或者裙带菜和海带而微细地湿式制粉,混合了所述主材料重量(100%)的15~20%的温和香茶、所述主材料重量的3~5%的粉末乳酸菌及低分子鱼胶原蛋白。
在此,混合用于提高粘性的物质的明胶、琼脂、魔芋、糖原等一个以上,且在混合天然色素混合制剂及增稠剂混合制剂之后,通过煮沸并冷却,由此,加工为凝胶形式。
并且,在煮沸的状态下,装入袋中,或在未煮沸而装入袋中之后,也能够在高温高压灭菌器制备灭菌产品。
发明的效果
如上所述的本发明具有如下效果,能够增加尽管对人体有用,但摄取手段或可制备的食物的种类少而摄取量少的裙带菜类的摄取,且提供便于携带和保管的新形式的食品而有益健康。
本发明具有如下效果,本发明在所述裙带菜类的基础上还包含温和香茶,为了去除在对用热水焯过的裙带菜制粉时产生的特有的腥味和味道,而使用配合作为香辛料(中药)的温和香茶的方法,由此可以去除裙带菜的腥味,当经常摄取温和香茶时,可以去除老人味、鳏夫味等人散发的恶臭并具有散发香味的效果,通过摄取本发明的食品也可实现这种效果。
而且,通过乳酸菌的调配而及其地有助于人的肠道健康,在加热活的粉末乳酸菌的情况下,成为死菌(益生元)而成为肠道的有益菌的食物而有益菌极度增长。因此,大量繁殖有益菌而使肠道更加健康。
并且,胶原蛋白为将粉末胶原蛋白溶解在高温的沸水中,冷却后会凝固形成凝胶,在常温下将裙带菜、温和香茶、益生菌等相互不同的材料以形成凝胶的形式保管在密封的容器内,而长期稳定保持,是一种通过该胶原而帮助皮肤健康和改善皮肤,预防引发心肌梗塞或脑中风等的动脉硬化,对骨骼弱的患者也有效,对脱发也有效等具有大量效果的有用的发明。

具体实施方式
下面参照附图而对实现本发明的优选的实施例作如下具体说明。
准备原材料
在本发明中,主要使用的主材料为裙带菜,能够混合裙带菜和海带或也能够分别使用,并且,也能够在各个裙带菜和海带或混合的裙带菜和海带混合一部分鹿尾菜等其它海草类。下面,以统称为裙带菜而进行说明。
将生裙带菜在沸水中稍微焯一下。由此,随着浆液去除,颜色会变蓝而呈现既好看又美观的颜色。
干燥焯过的裙带菜或在未人为去除水汽的状态下,进行湿式制粉而制备为细小的大小。
准备温和香茶
由藿香、丁香、茴香制备温和香茶。
在煮开时,以2升水为标准,分别放入10g藿香、丁香、茴香并煮沸两分钟左右。
据悉温和香茶的去味效果优秀,除了香之外,加上药材的功效而在改善肠胃功能方面也具有较大帮助,也具有解除慢性消化不良、肠胃冷症、频繁的腹泻、郁火症或压力的功效。
通过该温和香茶代替在制备本发明的裙带菜产品时的必要的水。
准备粉末乳酸菌
按粉末形式的乳酸菌准备益生菌,益生菌(Probiotics)是指进入体内而对健康具有好的效果的活性菌,到目前为止知晓的大部分的益生菌为乳酸菌,包含一部分杆菌(Bacillus)等,有助于乳酸菌繁殖及抑制有害菌,并有助于排便活动的顺利进行。
准备胶原蛋白
在准备低分子鱼胶原蛋白时,胶原蛋白(collagen)作为构成皮肤真皮层的70%的成分,虽然身体会不断生成,但20岁之后生成量减少,胶原蛋白的减少使皮肤层变薄,而使皮肤弹性下降,其会导致生成皱纹,该胶原蛋白在摄取低分子肽形式的鱼胶原蛋白时,很容易被人体吸收。
准备葡萄柚提取物混合制剂
葡萄柚提取物作为除了芸香和葡萄柚的种子之外,从果肉、白色的薄膜等提取水、乙醇或丙三醇后得到的物质,据悉具有有助于减少体脂,治疗念珠菌症、耳病、咽喉感染、腹泻等效果。
准备其它材料
作为施加粘性的材料,准备明胶(gelatin)、琼脂、魔芋、糖原(glycogen)。
明胶为在用热水处理构成动物的皮筋软骨等的天然蛋白质即胶原蛋白的情况下得到的衍生蛋白质的一种,因是无脂肪食品,有益于减肥,作为纤维性蛋白质群,具有支撑和保持我们身体健康的作用。
琼脂为将石花凉粉冻结脱水或挤压脱水而干燥获得,琼脂溶液的凝固力强,凝固的熔点较高,而不易腐烂,或与水的亲和性强而使水分保持一定形式的能力强,是大量应用于果冻果酱等的糕点和冰淇淋、酿造时的残渣沉淀等食品加工的食品。
魔芋为对蒟蒻进行干燥、粉碎、碾米而制备的甘露聚糖(mannan),与水相遇后成为具有粘性的胶体液,在此,添加碱性凝固剂而加热之后,冷却而制备为半透明的凉粉或面条的形式的食用魔芋。
糖原(glycogen)为由葡萄糖制备的同质多糖,这是一种在包括人在内的动物的肝脏和肌肉细胞中作为辅助性短期能量储藏用途的物质。
并且,为了表现所需的颜色,准备了天然色素混合制剂和增稠剂混合制剂,增稠剂混合制剂由角叉菜胶(carrageenan)、瓜尔胶、黄原胶、槐豆胶、酸角、氯化钙等构成,提高食品的粘度及粘性。
混合及加工
混合以所述准备的裙带菜为主的原材料和温和香茶、粉末乳酸菌、低分子鱼胶原蛋白、葡萄柚提取物混合制剂、其它材料,而完成为食品,比例(重量比)基于原材料的重量(100%)而混合15至20%的温和香茶,粉末乳酸菌及低分子鱼胶原蛋白混合各个原材料的重量对比3至5%,葡萄柚提取物混合原材料的重量对比1至3%,混合其它天然色素混合制剂和增稠剂混合制剂而混合原材料重量对比1至3%。
将如上所述混合状态的混合材料煮开之后,装入袋中并冷却。通过另一方法混合之后,直接装入袋中而在高温/高压灭菌器(蒸馏器)制备灭菌食品。
实施例1
作为主材料混合裙带菜或海带或裙带菜和海带而精细地进行湿式制粉而准备1kg。
在所述主材料混合150克的温和香茶。
在所述材料混合50克的粉末乳酸菌及50克的低分子鱼胶原蛋白。
在所述材料混合30克的葡萄柚提取物混合制剂。
在所述材料混合一种以上30克以内的用于提高粘性的物质的明胶、琼脂、魔芋、糖原等强化粘性的物质,混合天然色素混合制剂及增稠剂混合制剂。
煮沸之后,将其装入袋中并冷却,由此,制备成了凝胶形式的食品。
由此,在混合裙带菜或海带或者裙带菜和海带而精细地湿式制粉的主材料混合温和香茶、粉末乳酸菌及低分子鱼胶原蛋白,混合一种以上强化粘性的物质,混合天然色素混合制剂及增稠剂混合制剂,在煮开所述混合物之后,装入袋中并冷却,由此,制备为装入袋中的凝胶形式的食品,或者直接将混合物装入袋中而在高温/高压灭菌器(蒸馏器)制备为灭菌产品,同样冷却后,制备成装入袋中的凝胶形式的食品。
通过所述方法制备的食品在对健康非常有效的裙带菜类的食品混合粘性材料而成为凝胶或羊羹或凉粉形式的保健食品,如上所述说明所示,能够提供增加虽对人非常有效,但摄取手段少或可制备的食用种类少而摄取量少的裙带菜类的摄取的方便摄取的形式的食品。
并且,通过温和香茶的适当的调配而去除裙带菜类特有的味道,同时,很好地与裙带菜类匹配而为食用相合相配的食品,享受温和香茶特有的健康改善效果。
而且,通过乳酸菌的调配而包含活的粉末乳酸菌(益生菌)而在加热的情况下,死掉而成为死菌(益生元),该益生元为肠道有益菌的食物,而极大化促进有益菌的成长,对帮助肠道健康的有益菌繁殖不可或缺的益生菌起到重要的作用,大量繁殖有益菌而使肠道健康。
尤其本发明含有胶原蛋白,对皮肤给予水分而保持弹力的胶原蛋白由氨基酸、甘氨酸、脯氨酸等主成分构成,胶原蛋白保持维生素D而对钙也有益处。减少黑色素而显示的雀斑也因胶原蛋白的摄取而能够得到预防及缓解。也对引发心肌梗塞或脑中风等动脉硬化进行预防。
并且,胶原蛋白对骨骼弱的患者也有效,关节软的中年女性或男性是非常好食用的营养素,在持续吃胶原蛋白的情况下,可以拥有健康的毛发,所以担心脱发的人应该选择胶原蛋白。
胶原蛋白的功效中最伟大的皮肤改善效果毋庸置疑,具有如此众多且有益效果的胶原蛋白可与裙带菜一起食用,是其优点。
Claims (3)
1.一种利用裙带菜和海带的凝胶形式的保健食品制备方法,其特征在于,
准备作为主材料未加热的状态或焯过状态的裙带菜或海带,混合裙带菜和海带中任一种或两种而进行湿式制粉,
按所述主材料重量的15~20%准备由藿香、丁香、茴香制备的温和香茶而混合,
混合所述主材料重量的3~5%的低分子鱼胶原蛋白,
混合所述主材料重量的3~5%的粉末乳酸菌,
按所述主材料重量的3%以内混合作为提高粘性的物质的明胶、琼脂、魔芋、糖原中一个以上,
通过对混合的材料煮沸并冷却,由此,加工为凝胶形式。
2.根据权利要求1所述的利用裙带菜和海带的凝胶形式的保健食品制备方法,其特征在于,
在加工为凝胶形式之后装入袋中。
3.一种利用裙带菜和海带的凝胶形式的保健食品,其特征在于,
向混合裙带菜和海带中一种或两种而未加热的状态或焯过状态的湿式制粉的主材料中,按所述主材料重量的15~20%混合由藿香、丁香、茴香制备的温和香茶,分别混合所述主材料重量的3~5%的粉末乳酸菌及低分子鱼胶原蛋白,按所述主材料重量的3%以内混合用于提高粘性的物质的明胶、琼脂、魔芋、糖原中一个以上,通过煮沸并冷却,加工为凝胶形式之后装入袋中。
